Food heritages and landscapes protect and promote ‘food’ as part of the cultural and environmental values of places. Food tourists aim to discover places through its food, and the values attached to food production and consumption. This research note explores the unexplored relationship between fermentation and food from a tourism perspective. The production and consumption spaces represent avenues towards the process of attaching tourism values to fermentation, which are manifested in products such as bread and beverages such as beer, and also have a strong connection with places such as cheese in Italy and whisky in Scotland. Drawing from the understanding of fermentation as a source of authenticity in food and beverage tourism, the paper is the first to discuss the values of fermentation as a place-based expression to develop the link between food and tourism. This offers theoretical and practical implications of fermenting tourism and opens new opportunities to expand the understanding of the role that people, places and practices play in food tourism spaces. In the sixth United Nations meeting in 2022, the importance of responsibility in sustainable tourism development has been highlighted. The Tragedy of the Commons revealed the over-use of shared or common resources and each exploiter of common resources was guided by self-interest. The Cape Town Declaration brought together the destination approach to responsible tourism developed in South Africa with AITO's source market approach. Responsible Tourism is critical as it minimises negative economic, environmental, and social impacts; generates great economic benefits for local communities and enhances their wellbeing; involves local people in decision making about tourism in their communities; contributes to the conservation of cultural and natural heritage; is inclusive; provides more enjoyable experiences for tourists through meaningful experiences and is culturally sensitive, engenders respect between tourists and hosts, builds local pride and confidence. Business has incorporated Corporate Social Responsibility but there will be increasing pressure for businesses and destination governments to take responsibility, reduce emissions and adapt the way they construct and sell tourism. The engagement of tourists in ecotourism enables them to demonstrate a sense of responsibility in contributing to the development and preservation of a destination while having their vacation. The current study employed the Model of Goal-Oriented Behaviour (MGB) to predict tourist attitudes and sense of responsibility as a moderator to examine the relationship between personal behaviour intention. Questionnaire was utilised to collect responses from 200 respondents. Structural equation modeling was used to examine the proposed research model. The findings indicated that escape, hedonic and social interaction significantly influenced tourists' attitudes toward ecotourism sites, and the sense of responsibility has moderated the relationships between the visitors' intention to visit and preserve ecotourism destinations. The findings also stated that tourists' intention to visit ecotourism sites was least significantly influenced by their attitudes, despite their attitudes to preserve ecotourism sites. The study is one of the few to investigate factors affecting the attitude of tourists in the context of ecotourism and utilised social responsibilities as moderators to study the intention to visit and to preserve. This viewpoint coalesces existing knowledge about the rapidly evolving concept and denotes practical ways in which destinations can incorporate various stakeholder perspectives and levels of commitment and responsibility to bring desired outcomes to fruition.
