Over 2000 years have passed since spices and herbs were used for aroma, colour and flavour. In addition to being used to preserve foods and beverages, they have phytochemicals that have been shown to preserve food and beverages. Spices and herbs contain excellent antioxidant activity, which makes them extremely effective antioxidants. As whole spices or ground herbs, extracts, encapsulated products, or emulsions, spices and herbs have been used as antioxidants. Additionally, spices and herbs are all natural, an appealing quality for consumers, along with their effectiveness as antioxidants. Foods can be controlled by adding spices and herbs to reduce lipid oxidation. Fruits, leaves, twigs, and roots of Morus spp. are believed to be rich sources of secondary metabolites, such as flavonoids, anthocyanins, and alkaloids. Black mulberry berries also contain flavonols and phenolic acids in addition to anthocyanins (mostly cyanidin-3-O-glucoside). The mulberry leaves are a significant source of flavonols, particularly chlorogenic acid, which is the main phenolic acid, as well as quercetin and kaempferol in their glycosylated forms. The roots, barks and twigs of mulberry trees contain prenylated flavonoids, primarily morusin. The health benefits of mulberry include their ability to enhance digestion, lower cholesterol, aids in weight loss, promote blood circulation, strengthen bone structures, and improve immunity. A child’s good growth and development, which in turn leads to a productive and healthy life in later years, depend largely on adequate nutrition during the “critical window of opportunity” in the first 1000 days. Total weight gain during pregnancy, which is obviously determined and impacted by maternal nutritional intake during pregnancy, is one of many elements that determine foetal growth as a result of overall pregnancy status. One of the best indicators of a successful pregnancy is observing a mother’s adequate weight growth. Predicting new born and mother morbidity and death using weight gain during pregnancy is crucial. Other factors like PCOD, hypothyroidism, GDM can also play a role in excessive weight gain. Plant specimens were collected locally based on its medicinal, antimicrobial properties and extracted using aqueous means. The botanicals were tried in six different concentrations.
