Structuring has been carried out in the process of puree dehydration to different values of water activity, which are in the range of 0.38-0.78. Correlations between water activity (aw) and moisture content, and dependences between aw and insoluble solids content have been established for the studied products of different quality. Graphical dependences of the quality organoleptic evaluation on water activity, the content of water-insoluble solids (Inap) and alcohol-insoluble solids (Inal) have been presented for the structured purees. For in vitro therapy, plants with a proven absence of ArMV, ApMV, RpRSV, TBRV, TomRSV, SLRV, CMV, TRSV and infected with Raspberry bushy dwarf virus (RBDV) were selected.Virazole and salicylic acid at concentrations of 30, 50 and 70 mg/l were used as antiviral preparation.Low phytotoxicity of salicylic acid and high phytotoxicity of virazole were established. Long-term use of virazole, at concentrations of 50 and 70 mg/l, by the end of the 3rd passage leads to the complete death of microshoots. The dynamics of phenolic compound extraction during the must maceration process were studied, as well as the production of dry rosé wine from this grape variety. Optimal production regimes for dry rosé wines from the Codrinschi variety have been established.
