Endres","doi":"10.34117/bjdv6n6-067","DOIUrl":"https://doi.org/10.34117/bjdv6n6-067","url":null,"abstract":"Extra gourmet jams serve a demanding public in terms of quality aspects, as this type of jam does not have preservatives, stabilizers and gums in its formulation. The aim of this work is to develop the physical-chemical, microbiological and sensory characterization of a strawberry and raspberry jam with ginger. The strawberry, and red and black raspberry pulps, are source of nutrients and vitamins, and grated ginger root, which is famous for anti-inflammatory properties, were used for the preparation of gourmet jam, in addition to vanilla extract, pectin and sucrose. Regarding the physicalchemical characterization, the content of total soluble solids, pH, moisture and ash were determined, all in duplicate, following the methodology proposed by the Adolfo Lutz Institute. The microbiological analysis of molds and yeasts was performed according to the methodology proposed by Normative Instruction N. o 62 (December 29, 2011). For the sensory acceptance, a 9-point hedonic scale and a 5-point hedonic scale were used for purchase intention. The microbiological results were in line with that recommended by RDC N. o 12 (January 2, 2001) and the sensory evaluation showed that the product has a good acceptance and a high percentage of purchase intention. The content of soluble solids was 50%, the legislation recommends a content from 62% to 65%, consequently, the moisture content was higher than the recommended, and this is attributed to the low percentage of sucrose used in the formulation in order to avoid the crystallization of the final product. Junto com o aumento de consumo, cresce tambem as exigencias impostas pelos consumidores, onde aquele que tiver diferenciacao positiva ira se sobressair aos seus concorrentes. Porem, para isso, e necessario produzir farinha de trigo com qualidade aplicada e para isso faz-se necessario o uso de tecnicas laboratoriais. Desta forma, o presente trabalho teve como objetivo avaliar as farinhas de trigo destinadas a panificacao, denominadas tipo 1. Foram avaliadas a qualidade fisico-quimica (cinzas, umidade, cor) e reologica (numero de queda e forca do gluten), buscando verificar se as mesmas atendem a legislacao vigente quando existente e tambem se estao de acordo com a literatura. As amostras coletadas nos dez moinhos foram identificadas pelas letras A ate J e analisadas em triplicata. Com os resultados encontrados nesse estudo, foi possivel concluir que das 10 amostras de farinha de trigo, apenas as amostras D, E e G encontram-se aptas para serem usadas na panificacao. The objective of this study was to calibrate the EC-5 capacitive sensor to estimate soil water content in relation to different cerrado soil granulometry. Under laboratory conditions, the moisture variation of the Sandy Clay, Franco Sandy Clay and Clay soils was compared by the EC-5 sensor and the volumetric method. Samples were collected in the layers from 0.00 to 0.10; 0.10 to 0.30 and 0.30 to 0.50 m in central pivot areas in the Cerrado of Goiás. The soil was saturated and oven dried at 40oC to constant weight, this procedure was repeated three times. The statistical indices analyzed showed that the EC-5 sensor can be used for soil moisture determination and its calibration is required for each soil type. The sandy clay soil had a coefficient of determination (r2) greater than 0.95; for Franco sandy clay soil r2 was equal to or greater than 0.93 and for clay textured soil r2 was greater than 0.81.
