The method of real conditions is applied to frozen meat and yogurt with the following factors being: temperature: -20°C ± 2°C; humidity: 100% for frozen meat and temperature: 4°C ± 2°C; humidity: > 80% for yogurt. The accelerated aging method is applied to functional foods in conditions: 35 ± 2°C, 45 ± 2°C, 55 ± 2°C, and humidity: 70 ± 5% in parallel assessment combination with real-time monitoring at 25 ± 2°C, and humidity 70 ± 5%. The results showed that the yogurt sample reached stability until the 45th day and did not reach from the 47th day due to layering and deposits at the bottom of the box. The frozen meat sample remained stable when monitored until the 12.6 months with all indicators. Functional food samples were estimated to reach stability of up to 40.3 months when using the Van't Hoff formula, 32.0 months when using the Q10 coefficient, and 36.8 months when monitored in real conditions. The results of the study indicate that the less stable criteria on each sample background are the basis for selecting evaluation criteria for subsequent studies that contribute to reducing the cost of monitoring. B. infantis was successfully isolated from a new-born child’s fecal sample previously. In this study, the probiotic characteristics of this strain such as: extracellular enzyme production ability; antibiotic activity against food-born pathogen like E. coli, S. aureus; organic acid production and bile-salt sufferance were evaluated. The results showed that the isolated can produce amylase and protease enzyme, do not produce cellulase enzyme; the organic acids also were produced during development of bacterium. The bacterium can against E. coli and S. aureus and can grow in the media containing up to 1% of bile salt. However, these chemicals can pose a potential health hazard, which requires an assessment of the risk they represent. For this purpose, it is necessary to select priority potentially dangerous unintentionally present chemicals in rice. The study included five samples of rice from Cambodia, India, and Russia. Chemical element content studies were conducted on Agilent 7900 mass spectrometer (Agilent Technologies, Japan/Singapore) with an octopole collision/reaction cell (ORS) using the semi-quantitative analysis program for the mass spectrometer. The selection of priority unintentionally present chemical contaminants in rice was conducted in three stages. The researchers applied specific criteria to include chemicals in the further assessment at each stage. As a result of the evaluation of the selection of priority unintentionally present chemicals contained in rice sold through retail chains, a potential hazard category (PHC) was established, i.e., an integral characteristic of the potential hazard of an unintentionally present chemical contained in a food product, covering the possibility of ingestion of a specific chemical and its toxicity. The results showed that when using the maximum allowable dose, there were no dead mice. Experimenting on blood glucose-lowering effects on diabetic white mice obtained the results: with a dose of 500 mg/kg giving the best therapeutic effect, even slightly better than the positive control drug gliclazide, the blood glucose level decreased immediately after three days. After 21 days reduced to 52.5% and brought the blood glucose index to normal. As a result, there were seven distinguished serovars, including S. Kentucky (8 strains); S. Infantis (4 strains); S. Agona and S. Potsdam (2 strains); S. Saintpaul, S. Braenderup, S. Indiana (01 strain); OMF:1,z6:UT and 7:1,z6:UT (01 strain). The rate of multidrug-resistance Salmonella serovars carrying class 1 integron was 100% (21/21). The gene cassette region of class 1 integron accounted for 85.71% (18/21). The presence of mobile genetic factors in Salmonella in the study suggests that the bacteria can transmit or receive antibiotic resistance genes from other bacterial species in the natural environment. Optimal conditions included electrophoresis buffer solution 10 mM Tris/Ace; pH = 5,0; sample injection height 25 cm; sample injection time 30 s; separation voltage 20 kV. The limit of detection (LOD) and the limit of quantification (LOQ) of glucosamine were 8.00 ppm and 26.67 ppm, respectively. Calibration curve was constructed over the range from 20 to 1000 ppm giving a good linear correlation coefficient (R2 = 0.9993). The relative standard deviation (RSD) ranged from 1.28% to 2.33% (n = 3) and the recovery efficiency ranged from 95.2 to 102.3% which indicated good precision and trueness of our method. The method was applied to determine glucosamine in 4 dietary supplement samples randomly collected at the local markets. However, some of these products have been found to contain erectile dysfunction drugs that inhibit the enzyme phosphodiesterase-5 (PDE-5), leading to adverse effects on human health. In this study, capillary electrophoresis with capacitively coupled contactless conductivity detection (CE-C4D) was used to determine four PDE-5 inhibitors (including acetyl vardenafil, homosildenafil, hydroxy acetildenafil and mirodenafil) in dietary supplement samples. The optimum analytical conditions included electrolyte solution of 20 mM arginine (Arg)/acetic acid (Ace)/acetonitrile (ACN) 20% pH 6.5, silica capillary 50 μm inner diameter with effective length of 50 cm, separation voltage of 20kV, siphoning hydrodynamic injection at a height of 25 cm for 30 s. At the optimum analytical conditions, the limits of detection of acetyl vardenafil, homosildenafil, hydroxy acetildenafil, and mirodenafil were 2.1, 1.6, 2.3, and 1.3 mg/L, respectively. The analysis of four PDE-5 inhibitors by CE-C4D also showed good repeatability (< 5 %) and recovery (> 97 %). This method was further applied to simultaneously determine the amount of acetyl vardenafil, homosildenafil, hydroxy acetildenafil, and mirodenafil in three functional products. All four PDE-5 inhibitors were not detected in these samples. To demonstrate the utility of this method, the mixture of four PDE-5 inhibitors standard solutions was added to three samples. According to studies, hesperidin has anti-oxidant, analgesic, and anti-inflammatory effects on the nervous system as well as enhancing the body's resistance. Chenbi is a simple medicine, easy to obtain, and uses medicinal material for the potential extraction and isolation of Hesperin with high yield. The study developed and validated the process of determining hesperidin on medicinal samples and raw materials by HPLC. The study was successful in making the active ingredient hesperidin with a purity > 95 % (HPLC) sufficient as a condition to be used as a referenced material. The antibacterial activity of honey is one of the key factors that make honey beneficial. The study aims to compare some quality index and antibacterial capacity of some main kinds of honey in Vietnam (determined by the diameters of the inhibition zones, the minimum inhibitory concentration - MIC, and the bactericidal concentrations - MBC). The results showed that the honey samples met the quality requirements of TCVN 12605:2019 for honey, including free reducing sugar content (ranging 67 - 72 g/100 g), diastase activity (ranging from 5.58 ± 0.46 to 25.27 ± 0.05 Schad), HMF (5-Hydroxymethylfurfural) content (ranging from 18.06 ± 0.09 to 23.80 ± 0.25 mg/kg). All honey samples exhibited antibacterial activity against all eight strains of bacteria studied as follows: the diameters of the inhibition zones ranged from 8.50 ± 0.29 to 22.33 ± 1.53 (mm), MIC ranged from 0.15 ± 0.00 to 0.90 ± 0.14 (g/mL).
