Pembimbing: Theresia Puspita, STP, M.Si dan I Komang Suwita, SST, MP. \u0000 \u0000Anemia merupakan masalah gizi di Indonesia, prevalensi anemia di Indonesia pada tahun 2013 sebesar 37,1% dan terjadi peningkatan pada tahun 2018 sebesar 48,9% dengan proporsi anemia sebesar 84,6% ada di kelompok umur 15-24 tahun. Peningkatan risiko anemia pada remaja putri terjadi karena perempuan mengalami menstruasi dan asupan zat besi makanan yang rendah. Jenis penelitian ini adalah eksperimental dengan menggunakan jenis desain penelitian Rancangan Acak Lengkap (RAL) menggunakan 3 taraf perlakuan dan replikasi sebanyak 3 kali sehingga unit percobaan menjadi 9 unit dalam subtitusi yaitu tepung terigu : tepung tempe : bayam hijau sebagai bahan pembuatan pepaya sandwich biskuit berdasarkan makanan selingan pada remaja putri. Penelitian ini dilaksanakan pada bulan Mei-Juni 2022. Hasil penelitian yaitu 1) Tepung tempe dan bayam hijau (Amaranthus Tricolor L) sebagai bahan substitusi pepaya sandwich biscuit memberikan pengaruh terhadap mutu kimia (kadar air dan kadar abu). Kadar air tertinggi terdapat pada perlakuan P1 sebesar 9,7%. Sedangkan kadar abu tertinggi terdapat pada perlakuan P1 sebesar 2,8% . 2) Tepung tempe dan bayam hijau (Amaranthus Tricolor L) sebagai bahan substitusi pepaya sandwich biscuit memberikan pengaruh terhadap kadar zat gizi (kadar protein, kadar lemak, kadar karbohidrat). Kadar protein tertinggi terdapat pada perlakuan P3 sebesar 5,3g/100g, kadar lemak tertinggi pada perlakuan P3 sebesar 2,6g/100g dan kadar karbohidrat tertinggi pada perlakuan P1 sebesar 80,4g/100g. 3) Tepung tempe dan bayam hijau (Amaranthus Tricolor L) sebagai bahan substitusi pepaya sandwich biscuit memberikan pengaruh terhadap mutu organoleptik yaitu Rasa. Sibutramine HCl is absolutely not allowed to be found in slimming herbs in accordance with the regulation of the Indonesian POM No. KH.00.01.43.2773/2008 concerning traditional medicine containing BKO. \u0000The identification chosen in this study used the Thin Layer Chromatography (TLC) method, to determine the presence or absence of the addition of medicinal chemicals (BKO) in slimming herbs. Sibutramine HCl analysis was carried out qualitatively using the mobile phase of TLC, namely (acetone: chloroform). From the results of the study, obtained 3 out of 4 samples of slimming herbs containing the drug chemical sibutramine hcl with an Rf value of 0.77 \u0000There are 75% slimming herbs sold in Pasar Besar, Malang City which contain BKO Sibutramine HCl.
