The seasonality of production, short-term preservation in fresh form predetermines the need for their processing in order to provide the population with the necessary nutrients year-round. Common sauces are tomato and mayonnaise sauces. The assortment of fruit sauces is limited, and the traditional technologies of their production do not make it possible to preserve the biologically active substances of vegetable raw materials in them as much as possible and do not always differ in high organoleptic indicators. The established relationship between the quality of the fruit product, its color, nutritional value, and digestibility is directly dependent on polyphenols, which are chemically active and extremely unstable. One of the adopted technological solutions aimed at preserving the polyphenols of cherries and black currants during the development of sauce technology is the use of aromatic plant raw materials widely distributed in Ukraine. Previous studies have suggested that the leaves of black currant, walnut, oregano, elderflower, and chamomile flowers are able to preserve polyphenols from oxidation. Studies have confirmed the assumptions. It was established that the adopted concentrations of additives are optimal and make it possible to preserve cherry and blackcurrant bioflavonoids by 34...82 % more compared to traditional products. According to the organoleptic parameters, the products are advantageously distinguished by their intense color and pleasant aroma, characteristic of the raw materials. The radioprotective properties of cherry and blackcurrant sauces were investigated. Their positive influence on the removal of radionuclides from the body has been proven. An option for improving the profitability of the cheese industry is the genetic selection of dairy cows to produce milk with good rennet protein coagulation. The object of the study is the technology of cheeses made from milk from cows with different β-casein genotypes (А1А1, А1А2, А2А2). The subject of the study is the physical-chemical parameters of milk from cows with different genotypes for β-casein; yield of cheese from this milk and its quality indicators. Samples of Gouda cheese were produced according to traditional technology. The research established that the quality indicators of milk samples are typical for fresh cow's milk. The content of fat, protein, and dry matter in the milk of cows with the β-casein genotype A2A2 were slightly higher compared to A1A1 and A1A2. The study of the quality indicators of the cheese samples showed that the type of β-casein did not affect the organoleptic properties of the cheese. However, according to the content of the main chemical components, cheeses made from A1A2 milk had a higher content of dry matter and protein (61,6 % and 19,2 % on average, respectively) and a lower fat content (37.2 %). The amino acid profile of cheese from milk of cows with β-casein A1A2 and A2A2 genotypes showed a higher total content of amino acids – 14.89 mg/g and 13.84 mg/g, respectively. Calculations of cheese yield showed that cheese yield from milk of cows with β-casein genotype A1A2 was higher (mean value 13.1 %) than with A1A1 and A2A2. The obtained results are of practical importance, as it is possible to take into account how changes in the β-casein genotype in milk can affect the yield of cheese, and therefore, the profitability of production","PeriodicalId":11433,"journal":{"name":"Eastern-European Journal of Enterprise Technologies","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2023-12-28","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"139149001","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This paper examines the aspects of using transimpedance amplifiers (TIAs) for the tasks of converting the current received from the EFM sensor into voltage, which will make it possible to reduce the instrumental error and ensure the linearity of the atmospheric electrostatic field strength measurement. In the general case, for the functional circuits of the electrostatic field mill, which include a differential transimpedance amplifier, there is the use of two TIA circuits, which are connected in parallel. Despite the simplicity of implementation, such a configuration contains a number of disadvantages and is not optimal. In the paper, a comparative analysis of a typical circuit of a differential TIA and a circuit of an ungrounded differential transimpedance amplifier with zero voltage drop proposed by the authors is carried out. As a result of the analysis, it was established that the designed authentic circuit of the ungrounded differential transimpedance amplifier with zero voltage drop has better parameters of linearity and interference resistance, in contrast to the generally accepted one. The value of the signal-to-noise ratio for the proposed scheme improved by 42 % on average compared to the typical one. The main difference of the proposed scheme is that the stability of the amplification factor is ensured, the influence of the bias parameters of the operational amplifier is leveled, and the overall noise level is reduced. The use of the designed scheme of an ungrounded differential transimpedance amplifier with zero voltage drop could make it possible to increase the accuracy of the measurement of the electrostatic field strength","PeriodicalId":11433,"journal":{"name":"Eastern-European Journal of Enterprise Technologies","volume":null,"pages":null},"PeriodicalIF":0.0,"publicationDate":"2023-12-28","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"139149352","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

A method using a global search engine optimization algorithm, a forest conveyor line with a random forest model with Bayesian optimization (RFBO), is proposed. The algorithm of the method is as follows: – obtaining and processing initial data taking into account the degree of uncertainty; – formation of the optimization vector; – creation of descendant vectors; – ordering of vectors in descending order; – reducing the dimension of the feature space; – knowledge base training. In the presented work, data from websites www.m.Kolesa.kz, www.Cars.com and the average values of the median salary in the Republic of Kazakhstan were used to create a knowledge base, the program code of the platform was created using the Visual Studio Code in the Python language. The task to be solved was to predict car prices and assess the consumer capabilities of potential car dealership customers. We evaluate our solution based on a dataset that was created by analyzing several car classified sites and data on potential customers. Our results show that the accuracy of the model training was 92.1 %, and the accuracy of forecasting car prices and evaluating the consumer capabilities of potential customers was 87.3 % – this is primarily due to lower prediction errors than those of the estimated regressors using the same set of input data, high-quality object mapping and a more competitive RFBO algorithm, superior to simple linear models. The solved problem is due to the need to devise recommendations for organizing the work of forwarders when interacting with customers of transport and forwarding services that export or import different categories of cargo. A simulation model of the transport and forwarding company’s work in customer service was developed and implemented in the GPSS World simulation automation package. The model provides for the optimization of organizational and management processes in cooperation with customers of transport and forwarding services. When developing the model, the duration of the types of work in which freight forwarders are involved in the export and import of goods by road transport was taken into account. The model also predicts the probability of errors in the forwarder’s work and the duration of their elimination. The application of the developed model in practice will enable the owners of transport and forwarding companies to plan the full-time number of forwarders and the duration of service provision under different conditions of interaction with customers. The simulation results reflect the performance indicators of the enterprise in serving different categories of customers. This will make it possible to optimize the work of the enterprise by planning personnel support. The unsatisfactory accuracy and speed of existing methods for detecting fake news in unstructured input data demanded the development of a new approach for their effective detection. The study investigated the BM25 algorithm, methods for selecting parameters k1 and b, and their impact on the algorithm's effectiveness in detecting fake news. It was established that precise and detailed adjustment of these parameters is crucial in achieving optimal accuracy and data processing speed. The results showed that the successful selection of BM25 parameters improves the model's accuracy by up to 14 % compared to standard term frequency – inverse document frequency (TF-IDF) calculations. These results were made possible by experimentally tuning different combinations of k1 and b parameters, in which the algorithm shows the best speed indicator or the most accurate estimate of the importance of a term in a document. Balanced values of k1 and b parameters were identified, leading to the algorithm's optimal speed and accuracy in assessing word importance considering the input data's peculiarities. The balanced setting of the BM25 algorithm parameters explains the obtained results. They can be used for automated recognition and analysis of news and information on social media based on natural language processing. The effects are achieved by using inhomogeneous electrostatic fields of special configurations both in the accelerating and focusing parts of the device – a cylindrical immersion objective and a transaxial mirror, respectively. It is shown that the use of an inhomogeneous cylindrical field of a special configuration as an ion accelerator opens up the possibility of a multiple reduction in the energy spread of ions in injected ion packets, associated with the so-called \"turnaround time\" and, therefore, a significant (two or more times) increase in the limiting resolution of the mass spectrometer. The use of a transaxial electrostatic mirror as a time-of-flight mass analyzer makes it possible to significantly increase the sensitivity of the mass-spectrometer due to the implementation of triple space-time-of-flight focusing of ion packets. Key features include reduced ion energy spread, increased maximum resolution, and improved sensitivity due to triple focusing in space and time of flight. This research lays the foundation for expanding the capabilities of time-of-flight mass spectrometry, providing a more efficient and powerful tool for a wide range of scientific and industrial applications. The effects are achieved by using inhomogeneous electrostatic fields of a special configuration in both the accelerating and focusing parts of the device – a cylindrical immersion lens and a transaxial mirror, respectively. However, the relevant methodology is not adapted to the needs of the qualitative assessment of the impact of the human factor on expert decision-making. The \"systematic survivorship bias\" refers to the following: when involving experts in conducting examinations, they usually focus on that part of them, where statistically probable agreed opinions are observed based on the results of these examinations. Other experts are considered \"marginal\", their opinions are discarded and not taken into account, which defines the \"systematic survivorship bias\", also called the \"paradox of information availability\". Although the specified \"marginality\" may be a consequence of the unique experience of conducting examinations or, for example, the use of modern technologies by a specific specialist, little known to the general public. It should be noted that manipulation of statistical data with an orientation only on \"successful\" cases could be really dangerous, for example, in studies of the human factor in complex ergastic active and organizational management systems, in particular aviation. The rationale and implementation of the algorithm for detecting and eliminating the \"systematic survivorship bias\" have been given in this paper. m=90 specialists who are usually involved in various examinations by UkrINTEI took part in the research.
