One of its special features is fast growing plant and easily adapted to various types of regions which makes it attractive to be manipulated in many applications including in biofuel production, waste water treatment and also for pharmaceutical and medicinal purposes. Pectin is the common component found in plant cell wall and it has been used as food additive for its capability to gel, emulsify and stabilize food products. Several requirements for commercial pectin such as galacturonic acid content (GalA) and degree of amidation have been regulated. Studies have proven that duckweed have significant amount of pectin which make it as a potential source of gelling agent in food industry. However, the structural properties of pectin from duckweed need to be investigated, in order to ensure if they meet the regulated requirements for industrial production. It is also to determine the suitability of duckweed pectin utilization in different type of food products since pectin of different sources have different structural characteristics, thus exhibit different gelling capability. This present review discusses on the potential of pectin from duckweed species to be utilized as food additive with gelling function in food products. {"title":"The application of hurdle technology in extending the shelf life and improving the quality of fermented freshwater fish (Pekasam): A Review","authors":"Nadhira Hananiah, Alina Abdul Rahim","doi":"10.33102/2022240","DOIUrl":"https://doi.org/10.33102/2022240","url":null,"abstract":"Hurdle technology combines several preservation methods to secure the quality of foods by eliminating or controlling the growth of pathogens, making them last longer and, most importantly, safer for consumption. The hurdle approaches used for this Pekasam is microbially derived hurdle and physico-chemical hurdles. Inoculation of starter cultures with amine oxidase (AO) activity like lactic acid bacteria (LAB) in Pekasam is proven to reduce the accumulation of harmful biogenic amines, especially histamine, for up to 59.9%. This review also involves controlling the water activity and pH of Pekasam to a state where it inhibits the growth of microbes. This can be done by adding natural, cheap, and easy to find ingredients like lime juice (Citrus aurantifolia) to the basic Pekasam recipe. The presence of organic acids in the lime juice act as acidulants; it provides a low pH environment for microbes to retard their growth and therefore reduce the total plate count (TPC) whilst enhancing the flavour of Pekasam. However, in a long- ripened Pekasam, only the water activity hurdle is strengthened with time. Hence, a proper amount of salt is needed to sustain and maintain the water activity level below 0.94. The use of affordable herbs and spices with antimicrobial properties such as garlic, ginger and onion can prevent the proliferation of some pathogenic microbes, commonly found in Pekasam; thus, this helps in increasing the stability of the product. This review aims to outline the application of hurdle technology on fermented freshwater fish quality and shelf life. Although sodium hypochlorite is highly recommended and regarded as the most effective irrigant in root canal treatment to eliminate bacteria, it can cause harm to patients manifested by severe pain, rapid swelling and also obstruct breathing airway. However, it is believed that the chemical composition of Salvadora persica helps to treat and act as an antibacterial agent in root canal therapy. This study aims to obtain the crude compound from Salvadora persica by using the freeze drying method and to compare the antibacterial activity of the Salvadora persica and sodium hypochlorite against Enterococcus faecalis in aerobic condition. Antibacterial activity results showed that 150 mg/ml of Salvadora persica give comparable effect with sodium hypochlorite against Enterococcus faecalis. The therapeutic values of K. pinnata mostly lie on the presence of phytochemicals or plant active compounds which possess high potential as a natural antimicrobial agent source. Given the global health threat of antimicrobial resistance towards synthetic drugs, uncovering the natural sources as a novel drug is of crucial need. In this regard this review highlights the antimicrobial property of K. pinnata extract, the bioactive compound analysis of this plant extract and their mode of action against pathogenic microorganisms. Its clinical presentation depends on the degree of enzyme deficiency and ranges from an acute neonatal metabolic crisis with a high mortality rate through to an asymptomatic adult. We present a case of a newborn baby boy who presented with poor feeding, vomiting, lethargy, and respiratory distress. Laboratory investigations revealed severe hyperammonaemia, hyperglutaminaemia, hyperalaninaemia, absence of citrulline, and marked orotic aciduria. Family screening confirmed the presence of an OTC disease-causing mutation in his mother. It was a heterozygous mutation, c.316G>A. p. The pasteurised blended drink was hot-filled into three different packaging materials: glass bottle, beverage can, and polypropylene (PP) bottle, then stored in a dark place at ambient temperature (29 ± 2 °C). Packaging materials and storage time were found to affect physicochemical properties significantly and anthocyanins content of red cabbage-roselle blended drink packed in a glass bottle, can, and PP bottle during storage. Results show that pH, total soluble solids, colour L* (lightness), and b* (yellowness) of red cabbage-roselle blended drink increase significantly (p<0.05) during storage at the ambient temperature, whereas titratable acidity, colour a* (redness) and total anthocyanins content decrease significantly irrespective to packaging materials used. Blended drink packed in glass bottles significantly (p<0.05) has the highest red colour retention and anthocyanins content, followed by blended drink stored in cans and PP bottles. In some cases, the machinery equipment may still be attached to the limb when the patient reaches the hospital. In treating these injuries, the patient’s hemodynamic status should be the first priority of resuscitation. Following this and whenever possible, a reversal of the grinding mechanism should be done to free the limb as this would allow assessment of the extent of zone-of-injury prior to starting the surgical procedure. We report a case of a 28-year-old male who sustained a mangled hand injury that was successfully extricated from an industrial grinding machine, thereby allowing preservation of precious length of the limb during surgery. However, education has not stopped, but to go fully online as schools and universities could provide remote education. In this case, teachers have been struggling to adapt to the new norm to stop disease transmission. Thus, this study was conducted to investigate the impact of Online Teaching and Learning (OTL) on teachers during COVID-19. The questionnaire was distributed randomly online among 320 teachers in Malaysia. SPSS has been used to analyse the completed questionnaire to obtain descriptive and inferential statistics. Three variables that have been used in this study were effectiveness, challenges, and school reopening using Cronbach’s alpha, hypothesis testing, t-test, ANOVA, Pearson correlation, and multiple linear regression. This study has shown that most teachers were affected by using online as a new method of teaching. A negative correlation between effectiveness and challenges has implied that increasing challenges would decrease online teaching effectiveness. Besides, many of the components show a significant difference in the variables in terms of socio-demographic profiles.
