The organoleptic (firmness, melting resistance, structure, gumminess, melting in mouth, feeling in mouth, icy structure, smoothness, flavor, cream taste, milk powder taste, foreign taste, vanilla taste and general acceptability), physical (viscosity, overrun, melting rate and first drip time) and chemical (dry matter, fat, fat in dry matter, protein, pH, titration acidity and ash) properties of ice cream samples were investigated on the 1st, 7th, 15th, 30th, 60th and 90th days of the storage. According to results of the research, the viscosity of 7.5% fat ice cream Maltrin040 or Simplesse®100 added was higher than the control group. Moreover, decrease in fat adversely affected organoleptic properties of the ice cream. As a result of the findings, 7.5% fat ice creams 6% Simplesse®100 added can be recommended for ice creams to be produced by reducing fat ratio. There is a need to enhance rice productivity through a development of new varieties more productive and stable. Under the partnership between the Institute of Rural Economy, AfricaRice and Korea-Africa Food and Agriculture Cooperation Initiative (KAFACI) nine new lines selected among 300 fixed lines were evaluated in 8 sites under irrigated and lowland conditions. The plant material included 4 KAFACI lines derived from Anther culture (series K), 2 lines from interspecific crosses (series DKA), one line (DKA-M50) from induced mutation on wild rice (Oryza longistaminata), and other lines from simple crosses. The objective of the study is to identify genotypes adapted to irrigated, or lowland and/or both conditions. Analysis of variance revealed the genotypes differed significantly (p < 000.1) at all environments except Kadiolo, Longorola and Manikoura, which implies that the geno types constitute a pool of germplasm with adequate genetic variability. Heritability was high with 0.76 suggesting high component of heritable portion, therefore selection for the improvement for this trait can be achieved directly based on their phenotypic performance. The combined analysis of variance indicated significant effects of environment (p < 000.1), genotype (p < 000.1) and genotype × environment interaction (GEI) (p < 000.1) on grain yield. The significance of genotype and environment interaction suggests that genotypes behaved differently in different environment and demonstrated that GEI had remarkable effect on genotypic performance in different environments. The highest environment mean grain yield was observed in San (5,197 kg/ha), followed by Baguineda (4,960 kg/ha). The genotype SIK 442-2-2 was identified as genotype adapted to wider environments, and hereby recommended for cultivation in Mali. Wild rice derivative genotypes DKA 42, DKA-M50 and DKA 37 exhibited low yield and high stability. These genotypes are more suitable for breeding specific traits. Analysis also revealed that ARS 100-5-1-B, K150849 and K150810 exhibited low yield along with low stability. GGE biplot depicted the presence of three mega environments among the test environments used for evaluation of genotypes and revealed the nature of mega-environment. Based on this, the test environment could be grouped into three diverse mega-environments. The environments of Selingué 2, Selingué 1, Manikoura, Mopti and San grouped into the same mega-environment and the interspecific line SIK 442-2-2 was identified as the best performing and candidate genotype for this mega-environment. Kadiolo and Longorola grouped into the same mega-environment with the check variety as candidate genotype for this mega-environment. Noni plant is a small evergreen tree, used for both medicinal purposes and for food. Six kilograms (6 kg) of matured, ripe noni fruit (Morinda citrifolia), was harvested by hand picking, from Green Health Farm, Imo State, Nigeria. It was divided into three equal parts, for the purposes of sample preparation and analysis. Noni pulp: One portion of the noni fruit sample was cleaned, washed and drained to remove debris and thereafter, was spread on a clean tray and allowed to air dry, at room temperature. This practice encouraged further ripening and softening of the fruit. The seeds were then removed and the fruit crushed, to extract the pulp. The pulp was packaged in an air tight container and kept in the fridge for further analysis. Noni concentrate: The second portion of the noni fruit samples was cleaned, washed and allowed to air dry on a raised table, under room temperature. With the aid of a juice collection box, the juice was extracted and stored in a clean dry container for further analysis. Noni seed: The third portion of the noni fruit samples was cleaned, washed, to remove debris and thereafter, was crushed by hand to select the seed. The seeds were separated from the pulp by a strong spray of water, and then washed to further remove pulp on the seed. The seeds were dried for 2 days in open air and further oven dried and then grounded to a fine powder and packaged for analysis. The results of the proximate composition of noni seed, pulp and concentrate showed significant difference (p < 0.05) in the protein content of the seed, pulp and concentrate. The crude protein increased from 0.02% to 4.53%. The seed had the highest protein content (4.53%). There was significant difference (p < 0.05) in the moisture content of the seed, pulp and concentrate. The moisture content of the seed (8.27%) was lower than that of pulp (92.55%) and concentrate (88.38%). The crude fiber contents of the seed, pulp and concentrate were all significantly different (p < 0.05). The seed had 28.7% crude fiber value while pulp and concentrate had 0.03% and 1.95% respectively. The ash content of noni seed was significantly (p < 0.05) higher (3.07%), in respect to pulp (1.06%) and concentrate (0.79%). The crude fat values of the pulp (3.98%) and concentrate (2.99%) were higher than the seed (2.00%) and all were significantly different (p < 0.05). Noni seed had the highest nutrient, anti-nutrient and Vitamin B2 content. The blood sugar level, blood pressure and body mass index of the respondents were determined. A cross sectional survey was used for this study, a clustered and simple random sampling selection technique was used in selecting the samples. Anthropometric indices of weight and height were used to assess the body mass index (BMI), while waist hip ratio (WHR) was used to check for abdominal obesity. Women were considered overweight using world health organization standard (BMI at or above 25), or WHR above 0.85. Health status was assessed by checking blood pressure and blood sugar levels. Blood pressure was taken twice using Omron sphygmomanometer with appropriate cuff off size and women were classified hypertensive if having a mean blood pressure above 120/80 mmHg. Evolve glucometer was used to check for random blood sugar (RBS) levels, respondents were considered diabetics if they have a random sugar above 140 mg/dL. Food frequency table was used to assess food consumption pattern. Respondents were said to have low consumption if consumed the food 1-3 times per week or if rarely or never consumed. It is moderate if consumed 4-6 times per week and high, if consumed 7 times per week, or daily. Questionnaire covered relevant data such as personal data, demographic data. Result showed that the women mean standard deviations for body mass index (BMI), waist hip ratio (WHR), random blood sugar (RBS), systolic blood pressure (SBP) and diastolic blood pressure (DBP) were 26.29 ± 4.1, 0.86 ± 0.34, 112.51 ± 23.0, 115.4 ± 23.0 and 88.45 ± 4.3 respectively. The mean value for BMI was on the overweight region. Bivariate correlation analysis showed that SBP, DBP, RBS and WHR had positive correlation with BMI with confidence level set at 0.05% (0.206, p = 0.005; 0.16, p = 0.031; 0.081, p = 0.0021 and 0.148, p = 0.000 respectively). WHR also had stronger correlation with RBS (0.90, p = 0.278), systolic (0.272, p = 0.002), diastolic (0.21, p = 0.045). This confirms the assertion that WHR should be used as an indicator of cardiovascular disease not BMI. The survey also reveals that 3.6% were underweight. 49.0% normal, 29.9% overweight and 17.5% obese. Blood pressure levels were marginal as 30.04%, 35.4%, 34.3% are normal, pre hypertensive and hypertensive respectively. Most of the respondents had normal blood sugar as 91.2% were normal. Overweight, hypertension and diabetes were prevalent in rural communities as observed in this study. There is a need for routine check of WHR among women in clinical practice and epidemiological surveys, to reduce incidence of cardiovascular diseases. Experiments were carried out for two years in 2011-2012 on soybean crops with mixed type of weeds: annual dicotyledonous and annual grasses. The biological effectiveness of Zontran CSC was compared with a product containing metribuzin 700 g/kg in a formulation wettable powder (WP). It was established that the pre-emergence application of Zontran CSC on soybean crops at a dose rate of 1.2 L/ha was comparable to the biological effect of the product, consisting of metribuzin at 2.3 times more, but in the WP formulation. It was observed that Zontran CSC in comparison with the product containing a higher amount of metribuzin, but in the WP formulation, was at the level, and in some cases exceeded the biological effectiveness of this product. They have a lot of advantages. Dry composite mixtures, which would completely be the basis for the production of personalized food concentrates, are not represented. The development of such dry composite mixtures is actual and of scientific and practical interest. The purpose of this research is the selection and justification of local import-substituting raw materials components for dry composite mixtures used as the basis for the production of food concentrates. As the objects of research, the raw materials components of the starch, fruit and vegetable, industry were selected. The work uses currently accepted standard research methods for organoleptic and physic-chemical parameters of raw materials components. The research was carried out within of the project “Theoretical Substantiation of Production Technology and the Development of Import-Substituting Food Products of Functional Purpose Based on Dry Composite Mixtures”, funded by the Belarusian Republican Foundation for Basic Research. Oreochromis niloticus is one of the most highly successful invaders of aquatic ecosystems with competitive characteristic advantages over indigenous species. The aim of this study was to investigate the potential presence and impact of O. niloticus on Mitukutuku fishery. The study was undertaken using fisheries independent surveys for the period of 2 months. Fish identification key and gel electrophoresis identification methods were also used to confirm presence of O. niloticus and also possible hybridization with indigenous congeneric species. Fisheries dependent survey was conducted with fishers and traders to further assess presence of the invasive species and its impacts on their catches and socio-economic well-being. A total of 32 Oreochromis hybrids species and 19 of O. niloticus were found in the reservoir. This confirmed a higher proportion of O. niloticus in the reservoir. Results from interviews of fishers and traders revealed catch per unit effort of O. hybrids and O. niloticus to be higher compared to that of indigenous congeneric species. Similarly, fish traders confirmed that income for the fish sales increased from 5% in March to 7% in August. Overall, these results suggested that O. niloticus does not only exist in Mitukutuku reservoir, but also hybridizes with native species and dominates the entire stretch of the reservoir threatening loss of biodiversity and aquaculture breeding programme. Thagana","doi":"10.17265/2159-5828/2019.08.002","DOIUrl":"https://doi.org/10.17265/2159-5828/2019.08.002","url":null,"abstract":"School gardens growing African Indigenous Leafy Vegetables (AILVs) (Amaranthus cruentus and Vigna unguiculata) were established in Kangundo and Kilalani primary schools in Machakos County, Kenya and children aged 6-10 years (Kangundo, N = 66, Kilalani, N = 46) that met the inclusion criteria participated as study subjects. There were two phases, I (13 weeks) and II (12 weeks) with 4 weeks in between to enable crossover of the school as either experimental or control. AILVs were grown in gardens of the experimental school. Study subjects in the experimental group were fed on the AILVs recipe with an accompaniment of a mixture of cooked maize and beans once a day, 5 days a week per phase. The control group fed only on the accompaniment. Body Mass Index (BMI) was determined and a prescribed dose of deuterium oxide was administered and deuterium enrichment determined by Fourier Transform Infrared Spectrometry for % Fat Free Mass (FFM) in children’s saliva at baseline and endline. Serum Zn and Fe levels were analyzed by Atomic Absorption Spectroscopy at baseline and endline. Endline analysis in both phase I and II showed the % FFM, mean serum Fe and Zn were significantly higher (p < 0.001) only for the experimental group. Food-based intervention through vegetable garden establishments has potential to eradicate malnutrition among school-going children in Kenya. SIENG , a Khmer fermented soybean product, naturally contains both beneficial and pathogenic microorganisms. Traditional fermentation that relies on natural microbial flora and environmental conditions results in variable product quality and can lead to spoilage. A starter culture such as Bacillus subtilis can ensure the safety and stability of the products. The objective of this study is to control the growth of Gram positive pathogens contaminated into traditional fermented soybean ( SEING ) by using antimicrobial Bacillus subtilis isolated from the same kind of food. Out of 120 SIENG samples, 49 B. cereus strains were isolated, and 12 of B. cereus were positively synthesized compared with the lyophilized control enterotoxin. Two of these strains ( BTM8-7 and BTM8-8 ) produced high levels of enterotoxin. We identified five Bacillus strains with the ability to fight against indicator pathogenic microorganisms. Among the five strains, B. CeM6-2 had the highest activity level against Lactobacillus plantrum ATCC 8014 and the largest diameter. B. CeM6-2 tolerated up to 20 h at 30 °C and 22 h at 37 °C. In testing the strains with PK and PK-PMSF enzymes, bacteriocin produced by the strain B. CeM6PK untreated and B. CeM6-2PK-PMSF had a significantly stronger ability to suppress all the pathogenic indicators from 0 h to 47 h compared to the B. CeM6-2PK . Moreover, CeM6-2 outperformed the Miyagino strains, as it actively produced bacteriocin that fought against all four indicator strains of Gram positive and lactic acid groups, especially against Listeria monocytogenes , Streptococcus pyrogene , Leuconostoc mesenterids and L. plantarum , from 0 h-58 h and 0 h-40 h at 35 °C. CeM6-2 (1%) strain had the highest ability to fight against B. cereus at 24 h and at 34 h to 44 h incubation as well. CeM6-2 (10:0 mL) and CeM6-2 (9:1 mL) have the strongest ability to fight against B. cereus at room temperature (48 h and 72 h). The longer incubation and time at room temperature produce the highest level of bacteriocin. Thus, bacteriocins produced by B. Three research questions guided the study. Survey research design was adopted. The population of the study was 57. No sampling was done since the population was a manageable size. Validated questionnaire was used for data collection. Data collected were analyzed using mean and standard deviation. Findings showed that the types of disabilities among children in special need centers in Lagos State included among others: physical disability, learning disability, cerebral palsy, Down syndrome, attention deficit disorder/attention deficit hyperactivity disorder (ADHD), autism and speech and language disorder. Findings also revealed that the nutritional needs of children with disability included feeding on different foods, drinking water regularly, taking fruits daily, and ensuring that their nutrient requirements are met daily. Findings indicated that the nutritional challenges of children with disability included among others: excessive salivation, frequent constipation, inability to feed oneself, depending on care givers for feeding, food dropping from the mouth while being fed and difficulty in chewing and swallowing foods. Conclusion was made.
