A comprehensive food procurement greenhouse gas emissions baseline was established, emission hotspots were identified, and food waste reduction targets previously set by the restaurant were verified. A total of 6282 individual food purchases were reviewed. Due to repeat purchases, 941 distinct food and drink commodities were matched with 920 emissions factors from the WRAP Emission Factor Database v2.0, enabling a volume-based greenhouse gas emissions assessment. The analysis revealed seasonal variations and GHGE hotspots, providing a benchmark for similar catering operations. A Monte Carlo simulation was performed by randomising the emissions factors allocated to assess the sensitivity of the assessment. Despite the possible variation of emissions factors, the average GHGE per guest was found to be 5.87 kg CO<sub>2</sub> eq. per guest ( <math><mrow><mo>±</mo> <mn>0.27</mn></mrow> </math> ) and 4.79 kg CO<sub>2</sub> eq. per kg of food procured (±0.54). A dietary gap analysis found the associated GHGE exceed the range for GHGE per day/person of the Eatwell guide recommended by the British Dietetic Association as a healthy, sustainable diet. The analysis also shows that GHGE associated with food waste represents the fourth-largest contributor. Establishing a baseline for GHGE of food waste and procurement supports measurable goal setting, intervention identification, and progress tracking towards emission reduction targets. The findings equip the business to design targeted and evidence-based interventions.</p>","PeriodicalId":523895,"journal":{"name":"Cleaner food systems","volume":"3 ","pages":"None"},"PeriodicalIF":0.0,"publicationDate":"2026-06-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://www.ncbi.nlm.nih.gov/pmc/articles/PMC13288463/pdf/","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"148321663","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

This study presents a nanomineral biofortification strategy to enhance the nutritional profile of BSFL reared on two distinct feed substrates: conventional industry-standard feed (wheat bran and layer mash) and brewery spent grains. Monodisperse nanoparticles of zinc oxide, manganese oxide, copper oxide and elemental selenium were synthesized using a spinning disc reactor and incorporated into alginate gels (0.25-5 % w/v) and aqueous dispersions (0.05-0.1% w/v), to fortify the industry-standard feed and brewery spent grains. Proximate analysis showed that nanomineral supplementation significantly improved BSFL protein content (up to 40.8%) and fat levels (up to 30.3%), while modulating fiber and ash composition. Elemental analysis revealed that mineral bioaccumulation in BSFL was influenced by both substrate type and nanoparticle formulation. Alginate gels promoted zinc and selenium uptake, whereas aqueous dispersions enhanced manganese and copper accumulation. Notably, BSFL reared on fortified brewery spent grains exhibited higher zinc and manganese accumulation compared to those reared on conventional feed highlighting brewery spent grains potential as a superior base substrate for targeted mineral enrichment. Multi-element nanomineral mix treatments showed no antagonistic interactions, indicating synergistic uptake potential. BSFL grown on fortified brewery spent grains demonstrated enhanced bioconversion efficiency, effectively transforming low-value agro-industrial waste into high-quality insect biomass. The accumulated zinc in BSFL was more bioavailable to poultry than a standard zinc oxide feed additive in the completed broiler feed. This scalable approach enables an adoption tipping point for this emerging alternative protein solution by reducing the cost of production of BSFL and adding value to the insect meal end product.</p>","PeriodicalId":523895,"journal":{"name":"Cleaner food systems","volume":"3 ","pages":"None"},"PeriodicalIF":0.0,"publicationDate":"2026-06-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://www.ncbi.nlm.nih.gov/pmc/articles/PMC13288454/pdf/","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"148321676","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}

Vertical farming (VF) offers a land-sparing strategy: by relocating crop production indoors and achieving extremely high yields per unit area, VF can free agricultural land for other uses. However, VF has high greenhouse gas (GHG) emissions compared to traditional field farming due to intensive electricity demand, so its environmental value depends on whether land-sparing outcomes can offset production-stage impacts. This study provides the first UK-wide, full-system assessment of lettuce production, comparing business-as-usual field farming with national-scale VF and alternative uses of spared land. A primary-data life cycle assessment (LCA) quantifies the impacts of VF; a separate primary-data LCA of field farming incorporates DNDC-modelled national soil emissions; and the Land Use Net-Zero Advisor (LUNA) evaluates the GHG, land-carbon and energy implications of repurposing spared land for solar, wind, afforestation, agroforestry and bioenergy. VF reduces land demand by 93% but has higher GHG emissions per-kg than field systems. System-level outcomes depend on how spared land is used. Solar energy provides the strongest mitigation, fully offsetting VF's operational emissions and reducing total system impacts below the field baseline. Forestry and agroforestry generate positive land-carbon outcomes but more modest GHG reductions. Across all scenarios, peat soils dominate land-carbon losses, underscoring the need to avoid land-use change on peat and prioritise restoration. Overall, VF's environmental value arises from the land-use transitions it enables. When incorporated into multifunctional land-use planning, VF can support domestic food production while facilitating renewable-energy deployment and ecosystem restoration within a highly constrained UK land system.</p>","PeriodicalId":523895,"journal":{"name":"Cleaner food systems","volume":"3 ","pages":"None"},"PeriodicalIF":0.0,"publicationDate":"2026-06-01","publicationTypes":"Journal Article","fieldsOfStudy":null,"isOpenAccess":false,"openAccessPdf":"https://www.ncbi.nlm.nih.gov/pmc/articles/PMC13256068/pdf/","citationCount":null,"resultStr":null,"platform":"Semanticscholar","paperid":"148255455","PeriodicalName":null,"FirstCategoryId":null,"ListUrlMain":null,"RegionNum":0,"RegionCategory":"","ArticlePicture":[],"TitleCN":null,"AbstractTextCN":null,"PMCID":"OA","EPubDate":null,"PubModel":null,"JCR":null,"JCRName":null,"Score":null,"Total":0}
