Zakharova","doi":"10.21323/2618-9771-2023-6-1-4-10","DOIUrl":"https://doi.org/10.21323/2618-9771-2023-6-1-4-10","url":null,"abstract":"Along with thermal methods of processing plant raw materials, non-thermal processing methods have been actively developed in recent decades, which make it possible to preserve the qualitative characteristics of the initial raw materials to the maximum and increase the shelf life of the finished product. When using these methods, slight heating of the product can occur, for example, as in the processing by ultraviolet radiation (UVR). In the case of using such a type of processing as filtration, heating is completely absent; under the conditions of high pressure processing of the product (hereinafter HPP), a low temperature regime is observed. These methods are distinguished by minimizing the impact on the organoleptic characteristics of the finished product (texture, appearance, color, odor), as well as the preservation of micro- and macronutrients. The article discusses the main non-thermal methods of processing plant materials: high pressure (HPP), processing in a pulsed electric field (PEF), radioactive radiation, ultraviolet radiation (UVR), filtration. The advantages and factors hindering their widespread use on an industrial scale are noted. It is noted that high pressure, ultraviolet radiation and filtration to one degree or another are widely used in food production, while processing in a pulsed electric field and radioactive radiation are of extremely limited use due to the need to ensure the safety of processing for service  personnel. It should also be noted that processing only by non-thermal methods leads to a limited shelf life of finished products and often requires lower storage temperatures. If it is necessary to increase the shelf life, it makes sense to combine thermal and non-thermal processing methods, for example, microfiltration (ultrafiltration) of juice, bottling into consumer packaging, gentle pasteurization. The undoubted advantage of this combination can be a reduction in the thermal load on a product, since the initial microbiological contamination is reduced by filtration. Every year, the production of polymer packaging is growing by an average of 10-12%, and last year, due to the worldwide spread of SARS-CoV-2 (COVID-19) and its strains, the increase was more than 20%. A solution to the environmental problem is possible using the main basic approaches: disposal and recycling of waste, which will give the pos­sibility of the “second life” to already used polymers; development and creation of new biodegradable materials capable of degrading completely under the influence of external factors into relatively safer substances. However, it should be noted that the first method has a number of significant drawbacks associated with the difficulty in controlling the amount of recycling processes carried out, which can potentially lead to an increase in migration processes from polymeric materials. The second way to solve the environmental problem of packaging disposal and recycling is the direction associated with the creation of polymeric materials with the replacement of part of the traditional commercial synthetic bases with organic and inorganic fillers in various concentrations. However, the most promising way to handle packaging waste, in our opinion, is the development of technologies aimed at creating fully biodegradable materials with a regulated service life, which, after their life cycle, are disposed of in a short time without harming the environment. The decomposition of the data matrix of HSIs of avocado fruits was carried out using the principle component analysis. The reflection bands in the visible and near-infrared spectral regions interrelated with the process of maturation and the moisture content of avocado fruits were revealed. It has been established that visualization upon avocado inline sorting by moisture is possible when using factor loadings as pseudo-color. Calibration models for determination of moisture and dry matter of avocado fruits were built based on the data of moisture measurement and hyperspectral images. The matrix of spectral data was formed by two methods: random selection of spectral signatures of HSIs from the whole surface of fruits or the image surface of HSIs of fruits (initial HSIs) as a region of interest (ROI). Based on the data of moisture measurement and selection of spectral signatures of hyperspectral images, calibration models were built for detection of moisture and dry matter of avocado fruits. Using sequential simulation by the projection to latent structures (PLS) method, accurate calibration models were developed to detect moisture (RP2 = 0.89) and dry matter (RP2 = 0.92) in the composition of avocado fruits. When building calibration models by the initial HSIs, models were obtained to predict moisture (RС2 = 0.99) and dry matter (RС2 = 0.99) in the composition of avocado fruits. It is consumed directly as food or used for the production of fermented milk desserts and ice cream. The urgent task for yogurt producers is improving product quality due to additionally introduced protein components. In this study, an effect of protein isolates and concentrates on the rheological parameters of yogurt was evaluated. The methods included the determination of dynamic viscosity and texture indices, such as hardness, gumminess, chewiness, springiness, cohesiveness and adhesiveness. The prepared yogurt samples were investigated immediately and after 30 days of storage at a temperature of 4±2°C. The water-holding capacity was evaluated. It has been established that introduction of whey proteins makes it possible to increase the water-holding capacity to 77% and 80%, respectively. The highest value of dynamic viscosity (19.3 and 26.1 Pa·s) was found in the samples with isolate and concentrate of native whey proteins after 5 hours of fermentation. A decrease in dynamic viscosity with the introduction of milk protein isolate, soy protein concentrate and native whey protein isolate was observed after 5 hours of fermentation. Addition of the protein components led to a significant increase in texture indices, except for cohesiveness. The highest cohesiveness value of 0.4 N·s was found in the sample without protein components and in the sample with whey protein concentrate. The current bottleneck in RRM is a slow adoption rate, as the farmers’ views are still poorly studied and considered. We conducted individual surveys with 33 Spanish RRM farmers that collected multiple variables regarding general characteristics of farms, productive parameters, rangeland management and opinions around perceptions. We performed associative tests in order to detect the most important drivers of economic profitability and personal satisfaction. Among a wide diversity of farms, we found no features or management types associated with higher profitability, but rather a link to the level of intensification and degree of experience. About 93% of the farmers were mostly satisfied with RRM, even though they face difficulties – highlighting bureaucratic ones. To overcome such hurdles, we encourage improving the dialogue between farmers, researchers and institutions. This is the first state-level study on RRM in Spain, and one of the first analyses collecting farmers’ perceptions on this topic. Hatchability and survivability ratio was estimated from 858 batches duck eggs recorded from 220 marginal/landless duck farmers over a period of 24 months. Statistical analysis by fitting fixed effect general linear models revealed that the ambient temperature and relative humidity were the most critical climatic factors that affect the hatchability ratio of duck eggs and survivability ratio of ducklings. Besides, the human-made factor was also found to be associated with variations of the hatchability and survivability performances of duck under broody hen incubation. Thus identification of these factors and their effects on the studied traits would be helpful to provide appropriate season-based management strategies for economic and sustainable duck production in rural backyard farming systems. We established the geographic density of the three models and found that in Colombia, the corporate model is widespread; the traditional model has low concentration, but a high presence; and the alternative model has a growing albeit low presence. Through our case study we found that these models have different behaviors in their core production, distribution activities, and forms of governance. The overall aim of the study was to conduct an agroecological characterization of the farms by using the Agroecology Criteria Tool and focusing on the role of knowledge (co-)creation and sharing. We conducted walking interviews with ten farmers and applied participatory research techniques. We found that, first, the farmers either have already transformed the farm into an advanced agroecological model (level 3) or are transitioning from organic to agroecological (level 2–3). Second, the interactions between the farms and regional agri-food system actors foster the reconnection between eaters and regional growers (level 4). The actors of this transformation belong, thus, to grassroots self-organized and solidarity-based initiatives, which have built an agroecology-based regional agri-food network. And third, the diversity of activities and formats identified for engaging a broad range of stakeholders provides resources for redefining power relationships and co-creating knowledge. However, there are important barriers that must be addressed to scale this network, such as the lack of structures, platforms and collaborations fostering the knowledge (co-)creation and sharing, access to affordable and secure land, and the lack of governmental support. Agroecology is acknowledged as a sustainable – potentially transformative – alternative for conventional methods of agriculture. However, few farmers adopt agroecological practices. Recent literature suggests failure to achieve sustained and transformational change may be due to neglectance of personal, nonmaterial aspects of such processes, also referred to as “inner” dimensions of sustainability. Aiming for empirical underpinning, individual transition pathways of nine agroecological farmers were explored, and processes of change were analyzed using a conceptual framework of “zones of friction and traction” across three interconnected and embedded spheres of transformation: the personal, the practical and the political. The chosen framework allows for seeing the role of the personal aspects of transformation, without losing sight of pressures and influences from the “outside.” Identification of zones of friction and traction revealed where and why transformation was happening, as well as the drivers behind farmers’ choice and passion for agroecology. We argue that focus on the “inner” dimension or personal sphere is foundational to sustained transformational change in the practical and political spheres, i.e. the outside world.
