Snow","doi":"10.16995/ANE.284","DOIUrl":"https://doi.org/10.16995/ANE.284","url":null,"abstract":"This paper explains several teaching strategies derived from the Universal Design for Learning movement and Scholarship of Teaching and Learning research in High-Impact Educational Practices, especially the work of George Kuh. Two broad themes unite the successful approaches: creating opportunities for intellectual practice through cycles of feedback and establishing relationships between student and instructors, as well as among student peers, throughout the course of a semester. Furthermore, assignments and learning outcomes are enhanced when expectations are made extremely clear through multiple means, including rubrics and labeling of taxonomies of learning. The author argues that employing these methods creates better learning outcomes for all students, not only those with official accommodations. The in-class exercises outlined here teach students to examine the media they love—manga—through the lens of context, both historical and visual. By challenging students to closely read images and various forms of media, this pedagogy works to help students expand their understanding of Japanese popular culture while also integrating universal design for learning into the classroom. This gives visually oriented students a chance to participate more fully through privileging the visual over the textual for part of the class. The museum provides space for reflection and bearing witness to the profound suffering in the Massacre. Bearing witness means reliving or remembering and coming to know an experience, especially a traumatic one like Mỹ Lai. Witness bearers are both those reporting first-hand experiences and memories, and those listening to and learning about the experiences. When locals and visitors alike participate in the activities and rituals at Sơn Mỹ, in pilgrimages to Mỹ Lai, or in touring the memorial and museum, an opportunity is available to recognize the “existential legitimacy” of the events, experiences, and memories. Filmmakers in Viet Nam have been using this kind of shorthand for decades, for example through the retelling of the legend of the Trung Sisters, or in the ubiquitous tourist image of a young woman wearing the traditional Vietnamese costume (ao dai). Viet Nam is an interesting case in that the Confucian kinship model, which foregrounds the values of filial piety and the importance of male children, would seem to suggest that women are not important. Harris","doi":"10.16995/ANE.266","DOIUrl":"https://doi.org/10.16995/ANE.266","url":null,"abstract":"“In food, as in death, we feel the essential brotherhood of man.” Vietnamese Proverb This paper explores whether or not there is an identifiably Vietnamese national cuisine, one in which the ingredients, recipes, and/or dishes socially, culturally, and politically unite Vietnamese people. It contends that Vietnam, with its long history of foreign invaders, its own appropriation of the middle and southern regions, and its varied regional geographies, provides a critical example for Food Studies of the need to interrogate the idea of a national cuisine and to differentiate it from regional and local cuisines. The paper examines how cookbook authors and cooking schools have more generally sought to represent Vietnamese dishes as national, but that there is a strong argument against the claim of a Vietnamese national cuisine. We advocate a Food Studies methodology that creates an effective pedagogy that explores whether or not national populations are unified as single gastro-states or atomized by a plurality of regional cuisines. Through experiential assignments and student work we illustrate how Food Studies presents the pedagogical opportunity for students to study and learn at the intersection of national politics and the everyday lives of people, providing a framework for understanding connections of labor, gender, class, and, essentially, taste, among many other values.
