A study with a cross-sectional quantitative approach was carried out. Using a comparative analysis and taking into account gender as a grouping variable, using the T-Student parametric hypothesis test for independent samples, 159 attributes were compared on a 0-10 ratio scale in 445 subjects. As a preview of the results, it is noteworthy that the theoretical dimension with the most surprises is not the gender expectation in the choice of career, an understandable assumption if the grouping variable is gender. The methodology that was used was the quantitative, observational, transversal, descriptive and comparative. The compilation of this info was carried out through an instrument with 11 learning barriers questions of the academic environment, with 320 surveys in phase 3 of the Covid-19 Pandemic, applied to the faculties of Ciencia, Educación y Humanidades, Sistemas, Ingeniería, Mercadotecnia and Jurisprudencia of the Universidad Autónoma of Coahuila, the method of sampling that was utilized was not probabilistic through the strategy of sampling for convenience. The statistical techniques that were applied were the descriptive through frequencies and percentages, comparative with Kruskal-wallis method for independent samples and Mann Whitney U for two independent samples. This was achieved by conducting a life cycle assessment according to ISO 14044, 2006. The environmental impact was calculated with the SimaPro 9.1.0.11 PhD software with the EU & DK input/output food database. The method was IPCC 2013. The assessed impact category was global warming potential 100 years, associated with the type of food consumed, classified in the following groups: sugar, fruit and vegetables, dairy, grain crops, oils and fats, meat and fish products. It was found that the carbon footprint of the food courts is 7199.29 kgCO2eq/day, with a diet constituted by 42% fruits and vegetables, 19% meat and fish products, 12% grain crops, 11% dairy and 8% sugar, oils and fats. In this way, with the aim of promoting entrepreneurship in the classroom, the students of the Marketing career operated on a new food product developed by their food science peers, to create a professional business plan, susceptible to registration with the intellectual property instance and with potential to market. The methodology for teaching collaboration is presented and the challenges for obtaining effective results are highlighted. All information is qualitative-anecdotal. It is justified from a gap in the post-pandemic remote academic-administrative evaluation and supervision process, for the fulfillment of curricular criteria and indicators, by not incorporating the use of ITC in these processes through an information system for the adequate supervision of AP. The methodological design focuses on a qualitative, exploratory-descriptive study, a case study method, with a non-probabilistic sample of 10 higher education institutions. The results show the need to incorporate ITC in these processes, to systematize the information for both face-to-face and remote processes.
