Although Angkor’s connection to the river network was made in the early 20th century, the compartmentalized studies that have been carried out so far on the subject of Angkor’s relationship to its watery environment have resulted in interpretations that do not reflect the complexity of the subject. It will be argued here that archaeologists who do not integrate maritime approaches in studies of cultures like Angkor, where waterways play an important role in their environment, are likely to miss important aspects of fluvial cultures. By applying concepts such as the Maritime Cultural Landscape, it will be possible to push beyond the boundaries of terrestrial approaches and discover how the environmental conditions of cultures like Angkor – with river networks as the main means of communication – resulted in the development of specific cognitive and functional traits that gave form to fluvial cultural landscapes. Its inaugural overseas performance was launched at the Adelaide Festival in 1972 following an invitation from the South Australian Premier Donald Dunstan. The enormous success of the performances paved the way for the Company to become the island nation’s flagship company: embarking as cultural ambassadors in tours that included performances in the Soviet Union (1973 - Moscow, Kharkov and Kurst), Theran, Iran (1974), Seoul, South Korea (1975), Bangkok, Thailand (1976) and Kuala Lumpur, Malaysia (1977). An important heritage of a community is food, often defined as culinary or gastronomic heritage. This mixedmethod research developed a safeguarding plan for culinary heritage, specifically for lomi in Lipa City, Batangas, using the Statement of Significance. Different theoretical paradigms were used, especially anthropological theories like acculturation and modernization, and conservation frameworks such as UNESCO, ICOMOS and GCI heritage charters and conventions. To trace the significance of lomi, the researchers collected physical evidence by visiting and observing lomi houses, or lomians (restaurants dedicated to serving the lomi dish), in Barangay Poblacion focusing on the preparation of this food using Cultural Heritage Mapping and SWOT Analysis; oral evidences by conducting focus group discussions; in-depth interviews with different stakeholders; surveys in the local community; and archival evidence from different journals and books. Lipa lomi is significant in its historical, culinary, aesthetic, economic, health, social and symbolic aspects. Historically, it was introduced by To Kim Eng, a native from Amoy (now Xiamen) who established the first lomian in the city, Panciteria de Lipa. As the community accepted this culinary tradition, different lomians were established not only in the city but also in the whole province and became a localized business industry. Even though it was Chinese in origin, it follows the characteristics of Batangas cuisine wherein it focuses on the natural flavour of fresh ingredients and the simplicity of the cooking methods. Also, it is economically important because it became a good source of income and because of its affordability as a commercialized dish. Socioculturally, the culinary tradition is also important for the local community and its relationship to their religious culture. Perspectives of different stakeholders on the characteristics and identities of Lipa Lomi are identical and acceptable but it changes based on trends, issues and constraints. For the stakeholders, viability is important for the culinary tradition as it is agreed that it is one of the culinary identities and an attraction of Lipa and its community. Stakeholders also have their own movement to safeguard and sustainably develop the culinary tradition. From 26 January to 11 February 2018, four students/professionals from Southeast Asian countries joined VMAP funded by the Southeast Asian Ministers of Education Organization Regional Centre for Archaeology and Fine Arts (SEAMEO SPAFA). They were Agni Mochtar (Flinders University/Indonesia), Jonnah Marie Dagaas (University of the Philippines), Pornnatcha Sankhaprasit (Underwater Archaeology Division/Thailand), and Tep Sokha (Department of Archaeology and Prehistory/Cambodia). VMAP’s first project was in 2008 and this year the field school was a joint project with Flinders University. The fieldwork took place in two of the World Heritage Sites in Vietnam, Huế Imperial City and Hội An Ancient Town, and in the Marine Protected Area at Cù Lao Chàm. The four participants worked in international groups with other trainees to learn about maritime archaeology in Vietnam through a combination of terrestrial and maritime-based activities.
