Using project-based experiments, students relate the concepts that they are learning to everyday experiences. Herein, we describe a series of modules that can be used in part, or as a whole, for the total analysis of electrolyte beverages. The analyses described here include, sugar analysis through refractometry and hydrometry, electrolyte analysis via ion chromatography, dye analysis by thin layer chromatography, and citric acid analysis using liquid chromatography. In this study, experimental protocols were designed to enable undergraduate students interested in research to develop laboratory techniques via hands-on-experience in the analysis of food, water, vitamins/dietary supplements, and toy samples using flame atomic absorption spectrometry (FAAS). Levels of Ca, Cd, Cr, Mg, Fe, and Pb were determined in unknown samples by FAAS. In addition to having students develop techniques in analyzing metal levels in different unknown samples, this project also enabled undergraduate students to better understand the principles and practical operations of FAAS. The limit of detection (LOD) determined for reference standards ranged from 0.003 to 0.12 µg g-1 whereas the limit of quantification (LOQ) determined for reference standards ranged from 0.01 to 0.94 µg g-1 using the FAAS instrument. Some of the food and vitamins/dietary supplements showed levels of micro metals well above the provisional tolerable weekly intake (PTWI) value recommended by the Food and Agriculture Organization of the United Nations and World Health Organization (FAO/WHO). In addition, some vitamins/dietary supplements showed metal levels not reported on the labels. Using the amount of metals reported on labels for some of the unknown samples, percent error was calculated. Fish oil consumption has long since been associated with decreased risk of coronary artery disease. On the other hand, fish oil intake has been reported to be a major source of exposure to organic Hg, since most fish contain methyl-mercury. There is however very little data available in the literature concerning levels of Hg in fish oil supplements. Because of the high toxicity levels of Hg, these data may prove critical if physicians continue to recommend fish oil supplements to patients with coronary artery disease, bipolar and affective disorders, and for cardio-protective benefits in the general population. In this study, undergraduate students were instructed to use a quality assurance (QA) approach with inductively coupled plasma mass spectrometry (ICP-MS) to investigate levels of Hg in a fish oil supplement brand sold over the internet. Levels of Hg reported in the fish oil supplement product chosen at random from three bottles were 12, 5, and 3 times higher than the recommended provisional tolerable weekly intake (PTWI) values set by the Food and Agriculture Organization of the United Nations and World Health Organization (FAO/WHO). These levels may pose health risks to consumers if these products are consumed above 3000 g (approximately 4300 capsules) per week. This work demonstrates there is a need to develop regular screening methods for pharmaceutical products and such methods are needed for students trying to learn the approach. Our experimental approach will be incorporated into an instrumental analysis class as part of a guided-inquiry (GI) lab. It allows undergraduate chemistry students to gain experience in the measurement of drug permeability coefficients, a key indicator used by the pharmaceutical industry to identify the ease of absorption of any new drug candidate. The experiment requires a diffusion cell, coated membrane, peristaltic pump and UV-Vis spectrophotometer. The method has been validated by determining the permeability coefficients for a selection of acidic, basic and non-ionizable drugs.
