Striped Fish and carrot flour is good foodstuffs to add to the crackers rich in nutrition especially protein and give a natural compelling color. To know the effect of the addition of striped Fish and carrot flour to the sensory qualities and protein content in crackers. Four different crackers were prepared using these formulation: 1) control; 2) the addition 25 g striped catfish and carrot flour; 3) the addition 50 g striped catfish and carrot flour; and 4) the addition 100 g striped catfish and carrot flour. The preference test was conducted in this research to assess the organoleptic parameters, and analyse the protein content. The sensory evaluation revealed that composite crackers made by adding striped Fish and carrot flour 0, 25g, 50g and 100g had significant differences (p<0.05) in colour, texture, odour and flavor of sensory parameters. Crackers made with 25g striped catfish and carrot flour is the most accepted by panelis with Score Card evaluation method 3,56 out of 5. This formulation had 16.19 percent protein content. Striped Fish and carrot with a correct formulation could improve the sensory quality and protein content of crackers, so that can be good ingredients to improve food products. ABSTRAK Diversifikasi pangan perlu dilakukan untuk memperbaiki kebiasaan makan masyarakat dan mengatasi masalah gizi utama di Indonesia. Tepung Ikan patin dan tepung wortel yang ditambahkan pada crackers diharapkan dapat meningkatkan zat gizi terutama protein dan memberikan warna yang menarik; Tujuan penelitian untuk mengetahui pengaruh penambahan tepung ikan patin dan wortel terhadap kualitas sensorik dan kadar protein crackers. Empat biskuit berbeda disiapkan menggunakan formulasi berikut: 1) kontrol; 2) penambahan tepung ikan patin dan tepung wortel masing-masing 25 g; 3) penambahan tepung ikan patin dan tepung wortel masing-masing 50 g; 4) penambahan tepung ikan patin dan tepung wortel masing-masing 100 g. Uji preferensi dilakukan dalam penelitian ini untuk menilai parameter organoleptik, dan kandungan protein. Evaluasi sensorik menunjukkan bahwa crackers dengan penambahan tepung ikan patin dan tepung wortel masing-masing 0, 25g, 50g dan 100g memiliki perbedaan yang signifikan (p <0,05) dalam parameter sensori warna, tekstur, aroma dan rasa. Crackers dibuat dengan penambahan tepung ikan patin dan tepung wortel masing-masing 25g adalah yang paling banyak disukai oleh panelis menggunakan evaluasi metode Score Card yaitu dengan nilai 3,56 dari 5. Formulasi ini memiliki kandungan protein sebesar 16,19 persen. Mothers who are no longer breastfed infants 0-6 months old are said practice an early weaning patterns. Early weaning patterns in which breastfeeding is replaced with complementary foods tend to lead tomalnourishedchildren.Studying the early weaning practice of infants 0-6 months old in correlation to socioeconomic and geographical conditions. Samples were households with infants 0-6 months old in 33 provinces in Indonesia available in Riskesdas 2013 data, was about 7935 households.Data were obtained from questionnaire of RKD13 Block Jb; Breast milk and complementary foods and RKD13 Block III; Block IV included education, work, economic/quintile, and geography. Household categories were household that were practicing early weaning pattern to their babies 0-6 months old.Thedata analysis showed about 6.7 percent infants already got early weaning practices in 0-6 months old. When it was associated with the number of people in Indonesia in 2015 about 250 million people, then the very young baby already weaned around 1.2 million inhabitants. It was known that there was a correlation between the status of working mothers, education, and the place of residence to early weaning patterns. Early weaning practices of infants was influenced by several factors. Factors of education, occupation, economic status, and residential geography influencedthe early weaning practices. ABSTRAK Faktor yang paling dominan mempengaruhi kesehatan bayi adalah air susu ibu (ASI) . Ibu yang tidak lagi memberikan ASI pada bayi usia 0-6 bulan dikatakan sebagai praktek penyapihan dini.Pola penyapihan dini dimana pemberian ASI digantikan dengan makanan pendamping ASI (MP-ASI) cenderung mengakibatkan anak kurang gizi. Mempelajari praktek penyapihan dini bayi usia0-6 bulan serta kaitannya dengan keadaan sosial ekonomi dan geografi. Sampel adalah rumah tangga yang memiliki bayi usia 0-6 bulan di 33 provinsi di Indonesia yang tersedia dalam data Riskesdas 2013, yaitu berjumlah 7935 Rumah tangga. Data diperoleh dari kuesioner RKD13 yaitu Blok Jb; ASI dan MPASI dan RKD13 Blok III; dan Blok IV meliputi variabel pendidikan, pekerjaan, status ekonomi/kuintil, dan keadaan geografi. Kategori Rumah tangga adalah RT yang sudah melakukan penyapihan dini terhadap bayinya yang berusia 0-6 bulan. Berdasarkan hasil analisis data riskesdas 2013 diperoleh informasi sebanyak 6,7 persen bayi telah disapih pada usia 0-6 bulan. Bila dikaitkan dengan jumlah penduduk di Indonesia tahun 2015 yang diperkirakan sekitar 250 juta jiwa, maka bayi berusia 0-6 bulan yang telah disapih berkisar 1,2 juta jiwa. Diketahui bahwa terdapat hubungan antara status ibu bekerja, pendidikan, dan wilayah tempat tinggal terhdap pola penyapihan dini. Lack of activity can affect the occurrence of obesity. Obesity in early childhood promote obesity in adulthood and it is a risk factor for cardiovascular disease. The purpose of this study was to analyze the consumption of foods which have high calories and fat but low fibers and physical activities and its relationship to obesity in children aged 5-18 years. The study used data basic health research in 2013 and Individual Food Consumption Survey, 2014. The data were analyzed by univarite and bivariate using Chi Square and Spearman correlation test. The results showed that there was a relationship between obesity with sex, economic status, residence, family head work, and maternal education level. Consumption of foods associated with obesity is the consumption of fat (p=0,017). Meanwhile, there is no relationship between consumption of energy (p=0,457), fiber (p=0,431), and physical activities (p=0,078) with obesity. The conclusion of this study is the incidence of obesity in school children aged 5-18 years associated with fat consumption. The largest group of energy and fiber food contributors is the cereal group. The largest group of fatty food group is fat and processed group. ABSTRAK Perubahan pola makan pada remaja yang cenderung mengonsumsi makanan praktis dan siap saji mengakibatkan peningkatan prevalensi kegemukan. Kurangnya aktivitas dapat bepengaruh pada terjadinya kegemukan. Kegemukan pada usia dini berpeluang untuk mengalami obesitas pula pada saat dewasa dan merupakan faktor risiko terjadinya penyakit kardiovaskuler. Tujuan penelitian untuk menganalisis faktor konsumsi makanan tinggi kalori dan lemak tetapi rendah serat, serta aktivitas fisik kaitannya dengan kegemukan pada anak usia 5-18 tahun. Penelitian ini menggunakan data Riskesdas 2013 dan SKMI 2014. Data dianalisis secara univariat dan bivariat menggunakan uji Chi Square dan uji korelasi S pearman . Hasil penelitian menunjukkan terdapat hubungan antara kegemukan dengan jenis kelamin, status ekonomi, tempat tinggal, pekerjaan kepala keluarga, dan tingkat pendidikan ibu. Konsumsi makanan yang berhubungan dengan kegemukan adalah konsumsi lemak (p=0,017). Tidak ada hubungan yang nyata antara konsumsi energi (p=0,457) dan serat (p=0,431), serta aktivitas fisik (p=0,078) dengan kegemukan. Disimpulkan bahwa kejadian kegemukan pada anak sekolah umur 5-18 tahun berhubungan dengan konsumsi lemak. Penelitian merupakan studi observasional analitik dengan desain cross sectional study, bertujuan mendapatkan faktor determinan yang terkait dengan tekanan darah pada wanita usia subur. Data dari Penelitian Kohort Tumbuh Kembang Anak, yakni data wanita usia subur (15-49 tahun) yang berdomisili di Kelurahan Kebon Kelapa dan Panaragan, Kecamatan Bogor Tengah, Kota Bogor pada tahun 2016 dengan total sampel 450 orang. Hasil menunjukkan bahwa usia dan Indeks Massa Tubuh (IMT) merupakan faktor determinan pada kondisi tekanan darah diatas normal. Usia ≥ 35 tahun berisiko sekitar 2 kali untuk terjadinya tekanan darah di atas normal dibandingkan wanita berusia < 35 tahun. Nilai IMT ≥ 30 (kelebihan berat badan dan obesitas) berisiko sekitar 2 kali untuk terjadinya tekanan darah di atas normal dibandingkan wanita dan IMT < 30. However, nutritional content of complementary good has not been confirmed with international and national standard, yet, nutrition problems in Indonesia. This research on processed complementary food, aimed to confirmnutritional content with standard and identify the most frequently-appeared nutritional claims. There were nine samples of processed complementary food in a format of instant powder and five samples in a format of biscuit representing mereks and categories were in scope of this research. Conformity of nutritional content obtained from information on the label, were compared with international standard (Codex Alimentarius- CAC/GL 8-1991) and Indonesian National Standard (SNI 2005). According to this research, 88 percent of nutritional compositions in instant powder were conformed to Codex Alimentarius standard, however only 31 percent in biscuit were conformed to this international standard. On the comparison with Indonesian National Standard, 94 percent of nutritional content in instant powder were conformed to the standard and 86 percent of nutritional compositions in biscuit were also conformed to standard. The most frequently-apperead nutritional claims in the processed complementary food in scope were iron, calcium, protein, dietary fibre, and vitamin A. Three from five nutrients were closely relevant with current nutrition problem in Indonesia namely aenemia, protein/chronic energy deficiency, and vitamin A deficiency. ABSTRAK Makanan pendamping air susu ibu (MP-ASI) merupakan salah satu sumber zat gizi pada anak usia 6 – 24 bulan. Namun demikian, kandungan zat gizi pada MP-ASI belum dikonfirmasi dengan standar internasional serta nasional, serta permasalahan gizi di Indonesia.Penelitian produk MP-ASI pabrikan bertujuan untuk mengkonfirmasi kesesuaian kandungan gizi dengan standar dan mengidentifikasi klaim kandungan gizi yang paling banyak muncul. Sampel penelitian ini adalah sembilan sampel MP-ASI bubuk instan dan lima sampel biskuit yang dipilih secara purposif dan mewakili merek dagang dan jenisnya. Kesesuaian kandungan gizi diukur menggunakan informasi kandungan gizi yang terdapat pada label produk dan dibandingkan dengan standar internasional dari Codex Alimentarius (CAC/GL 8-1991) serta Standar Nasional Indonesia (SNI MP-ASI 2005). Tingkat kesesuaian zat gizi pada MP-ASI bubuk instan dengan Codex Alimentarius mencapai 88 persen Sedangkan kesesuaian kandungan zat gizi pada MP-ASI biskuit dengan Codex Alimentarius hanya sekitar 31 persen. Jika dibandingkan dengan SNI baik untuk bubuk instan maupun biskuit, sebanyak 94 persen zat gizi pada MP-ASI bubuk instan dan 86 persen pada MP-ASI biskuit sudah memenuhi SNI. Flavonoid, phenol, vitamin C contained in squash have strong cardioprotective effect but its optimal dose has not been known yet. The objective of this research was to analyze the effectiveness of squash juice administration with varying doses on the lipid profile of hyperlipidemia model-rat with High Fat Diet induced. This research was done in laboratory experimental research with pre and posttest control group design.The experimental animals were consisted of 36 rats and divided into negative control, positive control, treatment I (drug), treatment II, III, IV (squash juice dose 1 ml, 2 ml, 4 ml/ 100 g BW rat/day) with treatment for 38 days. The rat’s blood was taken before and after treatment for lipid profile. TC, HDL, LDL levels were measured using spectrophotometer Microlab 300 with CHOD-PAP. TG level was measured using Microlab 300 with GPO-PAP. Considering the statistic analysis, squash juice at doses 1 ml, 2 ml and 4 ml / 100 g BW rat/day, could reduce significantly (p < 0.05) TC, TG, LDL levels of rats. HDL level of rat could increase significantly (p < 0.05) with squash juice at dose 1 ml/100 g BW rat/day. There was no significant difference between the three doses of squash juice, so that squash juice at dose 1 ml/100 g BW rat/day is the best dose to reduce the lipid profile of hyperlipidemia model-rat. Hiperlipidemia merupakan gangguan metabolisme profil lipid (kolesterol total, trigliserida, HDL, LDL) yang menjadi penyebab utama timbulnya penyakit kardiovaskular. Flavonoid, fenol, vitamin C yang terkandung dalam buah labu siam mempunyai efek kardioprotektif yang kuat akan tetapi belum diketahui dosis optimal. Tujuan penelitian ini adalah untuk menganalisis efektifitas pemberian jus labu siam dengan variasi dosis terhadap profil lipid tikus model hiperlipidemia. Metode yang digunakan adalah eksperimental laboratorik dengan rancangan pre and posttest control group design . Sebanyak 36 tikus putih Strain Wistar jantan dibagi menjadi 6 kelompok dengan 6 ekor tiap kelompok, yaitu kontrol negatif, kontrol positif (diinduksi High Fat Diet ), perlakuan 1 (diinduksi High Fat Diet dan obat), perlakuan 2, 3, 4 (diinduksi High Fat Diet dan jus labu siam ) dosis 1 ml, 2 ml, 4 ml/100 g BB tikus/hari) dengan perlakuan selama 38 hari. Pengambilan darah tikus dilakukan sebelum dan sesudah perlakuan untuk analisis profil lipid. Kadar kolesterol total, HDL, LDL diukur menggunakan spektrofotometer Microlab 300 dengan metode CHOD-PAP. Kadar trigliserida diukur menggunakan spektrofotometer Microlab 300 dengan metode GPO-PAP. Data dianalisis menggunakan uji Paired T-Test dan menunjukkan jus labu siam ketiga dosis dapat menurunkan secara bermakna (p<0,05) kadar kolesterol total, trigliserida dan LDL tikus. The aim of this study was to analyse the proportion and the number of consumption deficit of energy and protein, for planning program of nutrition improvement (complementary food for school children/PMTAS) according to regions in Indonesia. Cross sectional study design. The sample of this study was all of children aged 6-12 years from Riskesdas data in 2010 which had the data of consumption. Data analysis describe the deficit of protein and energy according to groups of age and 8 regions in Indonesia. Proporsion of children who had energy deficit was 83,9 percent nationally, 64,4 percent of children was classified having severe energy deficiency (<70% AKE), and proportion of protein deficit was 64,2 percent, 17,8 percent of children was classified having severe protein deficiency (<70% AKP). The mean of protein and energy deficit for planning program of nutrition improvement nationally in school children require the adding about 650 calories for energy and 8,1 grams for protein. The number of protein and energy deficit was different according to groups of age and region. Protein adequacy for children in group of 6 years had fulfilled the recommended dietary allowance in 5 regions. The largest number of protein and energy deficit was in children aged 10-12 years in 8 regions of Indonesia. For the program planning of nutrition improvement in school children is supposed to notice the groups of age and regions . Kecukupan konsumsi pada anak sekolah harus diperhatikan, karena intake makanan berhubungan langsung dengan status gizi anak selain infeksi penyakit. Tujuan analisis mengetahui proporsi dan besaran defisit konsumsi energi dan protein, untuk perencanaan program perbaikan gizi (Pemberian Makanan Tambahan Anak Sekolah/PMTAS) menurut wilayah di Indonesia. Disain penelitian cross sectional . Sampel adalah semua anak berumur 6-12 tahun dari data Riskesda 2010 yang mempunyai data konsumsi makanan. Analisis data memaparkan defisit energi dan protein berdasarkan kelompok umur dan 8 wilayah di Indonesia. Proporsi anak usia sekolah yang defisit energi secara nasional 83,9 persen, sebanyak 64,4 persen defisit energi tergolong berat (<70 % AKE), dan defisit protein sebesar 64,2 persen, sebanyak 17,8 persen defisit protein tergolong berat (<70 % AKP). Rata-rata defisit energi dan protein secara nasional untuk perencanan program perbaikan gizi anak usia sekolah adalah perlu tambahan sebesar 650 Kalori untuk energi dan 8,1 gram untuk protein. Besaran defisit energi dan protein berbeda berdasarkan kelompok umur dan wilayah. Kecukupan protein kelompok umur 6 tahun sudah memenuhi AKP di 5 wilayah. Defisit energi dan protein terbesar terdapat dikelompok umur 10-12 tahun di 8 wilayah Indonesia. Fe and folic acid supplementation is one program to overcome iron deficiency anemia in the pregnant women in Boyolali but the incidence rate of anemia remains high (42,9%). This study was to analyze the relationship of food intake, Fe and folic acid supplementation on hemoglobin level in pregnant women with history of CED and anemia of breastfeeding women. This research study used analytic observation with cross sectional approach. The subject of 42 breastfeeding women with past history of CED and anemia in the third trimester of pregnancy in five public health centers in Boyolali. Data of supplementation and nutrient intake was obtained by interview. Nutritional status was determined using upper arm circumference and BMI. Hemoglobin level was measured by using cyanmethemoglobin method. Statiscally analyzed using correlation and multiple regression tests. The breastfeeding women had low food intake (<70% RDA) including macro and micro nutrients. Food intake and nutritional status in breastfeeding women negatively affected hemoglobin level in breastfeeding women (B=-0,005; p=0,040 and B=-0,134; p=0,016 respectively). Fe and folic acid supplementation in pregnant women with CED and anemia significantly influenced hemoglobin level during breastfeeding (B=0,720; p=0,016). Completed supplementation of iron-folic acid in pregnant women with CED and anemia could increase 0,720 g/dL hemoglobin levels during breastfeeding . Ibu hamil dengan kurang energi kronis (KEK) berpeluang menderita anemia 2,76 kali dari pada ibu hamil normal. Suplementasi Fe dan asam folat merupakan salah satu cara mengatasi anemia defisiensi besi tetapi angka kejadian ibu hamil di Kabupaten Boyolali dengan anemia masih tinggi (42,9%). Penelitian ini bertujuan menganalisis hubungan asupan makanan, suplementasi Fe dan asam folat dengan kadar hemoglobin pada ibu hamil riwayat KEK dan anemia saat menyusui. Jenis penelitian observasional analitik dengan pendekatan c ross sectional . Subjek penelitian 42 ibu menyusui dengan riwayat KEK dan anemia pada trimester III dari lima Puskesmas di Boyolali. Data suplementasi Fe dan asam folat serta asupan zat gizi diperoleh dengan wawancara. Status gizi ditentukan dengan LILA dan IMT. Kadar hemoglobin ditentukan dengan metode cyanmethemoglobin . Analisis statistik menggunakan uji korelasi dan multivariat regresi ganda. Hasil menunjukkan bahwa asupan energi, lemak, karbohidrat, zat besi dan asam folat pada ibu menyusui termasuk kategori defisit (<70% AKG). Asupan makanan dan status gizi ibu menyusui berhubungan negatif terhadap kadar hemoglobin saat menyusui (B=-0,005, p=0,040 dan B=-0,134, p=0,016).
