The system employs a high-sensitivity analog front-end coupled with a double offset cancellation comparator, achieving a wide concentration range of 0.05-100 μM, a sensitivity of 5.1 ADC units per μM, and a voltage gain of approximately 12.25 mV/μM. Upon exposure to histamine in the presence of diamine oxidase (DAO), the sensor exhibited a substantial signal change of 61.6%. A significant inhibition is observed when the interference level is substantially high, specifically at a histamine-to-putrescine/cadaverine/tyramine ratio of 1:20. The high sensitivity and specificity of the proposed pixel array make it an ideal candidate for on-site histamine detection in food and fish markets.
