Copper foam, nickel foam, and copper film were utilized as the working electrodes, respectively. Platinum electrode was used as the counter electrode, and saturated calomel electrode functioned as the reference electrode. Cyclic voltammetry (CV) and chronoamperometry (i-t) were used to scan brown sugar samples of different brands and grades in the aqueous environment. An evaluation method was constructed to discriminate the brown sugar samples using the detection data. Results revealed unique characteristics of different brown sugar samples when using different working electrodes. Logistic regression model was utilized to establish the relationship between the current density and variety of brown sugars utilizing i-t scanning data.
