The reverse gelation technique utilized in this study raised the p-anisidine value while lowering the peroxide value of the seed oil. Abstract

Black cumin seed oil (BCO) is an important oil source in the food industry. Alginate capsules with aqueous cores can be made by reversing the gelation technique with alginate and CaCl2.
