In this study, a self-assembled nanoemulsion (PNE) was successfully developed, and its physicochemical properties and therapeutic efficacy against UC were systematically evaluated. The prepared nanoemulsions displayed excellent stability, anti-inflammatory, and antioxidant activities. In dextran sulfate sodium (DSS)-induced colitis in mice, treatment with PNE significantly alleviated weight loss, restored colon length, reduced DAI score, and mitigated histopathological damage. These therapeutic effects may be attributed to PEITC's ability to attenuate intestinal oxidative stress, suppress inflammatory responses, and enhance the integrity of the intestinal barrier.
