These polysaccharides control glucose metabolism and regulate insulin sensitivity, indicating their potential for managing and preventing metabolic disorders like diabetes. Although the preclinical studies are promising, further research is essential to standardize extraction techniques, conform clinical efficacy, and clarify the mechanism of health benefits. This review provides a comprehensive overview of recent advances in the production, properties, structural characteristics, and biological activities of GFPs.
