Co-fermentation effectively improved the volatile profiles of surimi. Comparatively, a higher inoculation ratio of <em>M. purpureus</em> was favorable for the production of esters and ketones, whereas a higher proportion of <em>A. elegans</em> reduced the aldehyde contents, especially nonanal with fishy odor.
