Simulation of Transport Phenomena for Microwave Freeze-Drying of Potato Slices Using Finite Element Analysis

It was found that the <i>DR</i> and <i>D<sub>AVG</sub></i> were in the range of 301.3 × 10<sup>−3</sup>–775.4 × 10<sup>−3</sup> min<sup>−1</sup> and 1.045 × 10<sup>−10</sup>–3.336 × 10<sup>−10</sup> m<sup>2</sup>/s, respectively. In the sublimation phase, the <i>DR</i> and <i>D<sub>AVG</sub></i> were higher than those in the desorption phase. The <i>DR</i> and <i>D<sub>AVG</sub></i> increased as the microwave power level increased but decreased as the thickness increased. Abstract
