摘要

本研究采用枸杞胶和阿拉伯胶的不同用量作为自变量,产生了13种不同的组合,两个变量,五个水平。采用响应面法研究了枸杞胶和阿拉伯胶对枸杞样品物理性质的影响。得到了描述各变量对产品响应影响的多元回归方程。研究结果表明,以深油油炸小吃chakli含量1.45 g、阿拉伯胶含量1.82 g为优化条件进行数值优化得到的最佳小吃产品,其水溶性指数和横向膨胀率均有所提高,而含水率、剪切力和吸湿性均有负面影响。
