It is necessary to provide local food-based formula using Pila ampullacea, tempeh with local soybean, and Moringa oleifera leaves for hemodialysis patients.Objective: To analyze the effect of local food-based formula using Pila ampullacea, tempeh, and Moringa oleifera leaves to the acceptability and nutrition intake in hemodialysis patients.Materials and Methods: This study was carried out in Dr. Sardjito Hospital, Yogyakarta, Indonesia from February to March 2020. Subjects were 54 maintenance hemodialysis patients who met the criteria of study. The independent variable was the provision of local food-based formula, while the dependent variable were the acceptability and nutrition intake.Results: As many as 42.59% of subjects were able to consume all the formula given for three days and 50% of subjects have good acceptance of the local food-based formula. The effect of formula intake to the total intake of energy, carbohydrates, fiber, water, calcium, phosphorus, iron showed p-value <0.05, but p-value ≥0.05 for protein, fat, sodium, and potassium. The effect of the non-formula intake to the total intake for all nutrients showed p-value <0.05.Conclusion: Most of the subjects have a good acceptance of the local food-based formula. Formula intake affects total intake of energy, carbohydrates, fiber, water, calcium, phosphorus, and iron, but does not affect total intake of protein, fat, sodium, and potassium. 摘要

背景:改善营养摄入是克服血液透析患者营养不良的措施之一。有必要为血液透析患者提供以壶肉、豆豉和辣木叶为原料的当地食品配方。目的:分析壶肉、豆豉、辣木叶当地食物配方对血液透析患者接受度和营养摄入的影响。材料和方法:本研究于2020年2月至3月在印度尼西亚日惹的Dr. Sardjito医院进行。研究对象为54例符合研究标准的维持性血液透析患者。自变量为当地食品配方的提供,因变量为可接受性和营养摄入量。结果:42.59%的受试者能够在3天内吃完所有给药配方,50%的受试者对当地食物配方有良好的接受度。配方饲料采食量对能量、碳水化合物、纤维、水、钙、磷、铁总采食量的影响p值<0.05,对蛋白质、脂肪、钠、钾总采食量的影响p值≥0.05。非配方日粮对各营养物质总日粮的影响p值均<0.05。结论:大部分受试者对当地食基配方奶有较好的接受度。配方奶粉的摄入量影响能量、碳水化合物、纤维、水、钙、磷和铁的总摄入量,但不影响蛋白质、脂肪、钠和钾的总摄入量。所有营养素的总摄入量受到受试者非配方来源摄入量的影响。
