Potato rings of 3<!--> <!-->cm diameter and thicknesses of 2<!--> <!-->mm, 3<!--> <!-->mm and 4<!--> <!-->mm were soaked in NaCI solutions of 10, 15, 20, 25 and 30% w/v, for varying time of 20, 40, 60, 80 and 100 minutes. The pre-treated slices were then oven-dried in a convective oven at 60<!--> <!-->°C. Moisture diffusivity was determined by the method of slopes, while β-carotene was measured by UV/VIS- spectrophotometer. 研究了渗透盐溶液预处理后烘箱干燥对黄肉甘薯的去湿性和β-胡萝卜素含量的影响。将直径为3cm,厚度为2mm、3mm和4mm的马铃薯环分别浸泡在10、15、20、25和30% w/v的nacl溶液中,浸泡时间分别为20、40、60、80和100分钟。预处理后的切片在60°C的对流烤箱中烘干。水分扩散率用斜率法测定,β-胡萝卜素用紫外/可见分光光度计测定。干燥过程中水分扩散系数为3.648 × 10−7 m2/s ~ 1.459 × 10−6 m2/s, β-胡萝卜素损失为47% ~ 86%。随着浸泡时间和浓度的增加,NaCl溶液的去除率显著降低,但随着样品厚度的增加,出水量显著增加,其中4 mm尺寸的出水量最大(1.535 g H2O/g样品),2 mm尺寸的出水量最小(1.434 g H2O/g样品)。盐溶液渗透预处理对β-胡萝卜素没有影响,但随后的烘箱干燥却使β-胡萝卜素降解。
