Responses in this research were chemical responses which include antioxidant activity by DPPH method, Vitamin C content by iodometric titration method, and crude fiber content by gravimetric method.  The result of content identification (antioxidant, vitamin C, and crude fiber) on local and imported fruits (orange, apple, and mango) from supermarket / hypermarket in Bandung city found that the local fruits have different nutritional quality compared to the imported fruits. 摘要

本研究的目的是测定本地和进口水果中所含的抗氧化剂、维生素C和粗纤维的含量,这些水果是橙子、苹果和芒果。该研究的预期效益是向社会提供国产水果和进口水果(橙子、苹果、芒果)的水果成分(抗氧化剂、维生素C、粗纤维)的益处,并告知三种商品的含量(抗氧化剂、维生素C、粗纤维)的差异。本研究采用目的抽样的方法,通过万隆市市场调查(超市/大卖场)、样品数量的确定、取样、样品制备和样品检测等几个步骤来完成。DPPH法测定抗氧化活性,碘量滴定法测定维生素C含量,重量法测定粗纤维含量。对万隆市超市/大卖场的本地水果和进口水果(橙子、苹果、芒果)进行含量鉴定(抗氧化剂、维生素C、粗纤维)的结果发现,本地水果与进口水果相比,营养品质有所不同。这是由于进口水果的分销和储存所需的时间较长,而本地水果的流动性往往更快。
