Selenium is a trace element that is essential in small amounts, but can be toxic in larger amounts. Humans require selenium for the function of a number of selenium-dependent enzymes, also called selenoproteins which are antioxidant enzymes. Selenium deficiency has been associated with impaired of the immune system, of the iodine metabolism. Several forms of selenium intakes are available, implying a complex metabolism for this element. In case of selenium deficiency, there is a redistribution of selenium to some tissues and a hierachy in the synthesis of the selenoproteins. There is a great deal of evidence indicating that rich selenium diet or supplementation is beneficial in the prevention of cancer or inflammatory diseases.
