A highly sensitive flow injection chemiluminescence method for myoglobin detection in beef samples based on zinc ion-induced “dragging” of heme iron†
We report for the first time that zinc ions (Zn2+) significantly enhance the chemiluminescence (CL) signal of the luminol–hydrogen peroxide (luminol–H2O2) system by “dragging” heme iron out of myoglobin (Mb). Integrating this with myoglobin aptamer (Mb aptamer) specific recognition enables sensitive and specific quantification of Mb content in beef samples.
