Many people consider fruit juices to be safe beverages with numerous health benefits for human bodies. Although fruit juices contain several useful compounds that can promote human health, there is a probability of both microbiological and non-microbiological contaminations in these juices. It is important to have reliable detection methods to analyze the useful and harmful compounds present in different fruit juices. In fruit juice industry, various analytical methods have been used for analyzing different parameters, contaminations, and useful compounds in fruit juices. However, some limitations restrict their application in this field. Biosensors, as newly emerging sensing approaches, have been developed in this field. The sensitivity, selectivity, portability, and accuracy are key considerations in developing biosensors for detection of contaminations and antioxidants. This was achieved by the application of bioreceptors, nanomaterials, and novel designed technologies. In this review, the role of different techniques, nanomaterials, and bioreceptors is reviewed for development new biosensors in terms of analyzing fruit juices.
