FG-γ-PGA emulsions had smaller droplet sizes, and analysis of interfacial characteristics, particle size, and zeta potential indicated better system stability than FG emulsions. These improved properties of FG-γ-PGA emulsions highlight their potential as efficient carriers for curcumin.
