MeSA stimulated the contents of esters and lactones by enhancing the activities of HPL (hydroperoxidelyase), AAT (alcohol acyltransfera), and ACX (acyl-CoA oxidase). Consequently, this facilitated the revival of ‘fruity aroma’ in apricots at low temperature storage.
