As a result of the study, the high antagonistic activity of the culture collection lactobacilli, fungal kefir starter culture, and their metabolic complexes against conditionally pathogenic bacteria <i>P. aeruginosa</i>, both for the culture collection type strain and wild-type isolates, was confirmed. The <i>L. helveticus</i> NK1 strain was a more active antagonist of <i>P. aeruginosa</i> compared to <i>L. rhamnosus</i> F, which might be due to its ability to produce peptides with antimicrobial activity. These data confirmed the prospects of using the <i>L. helveticus</i> NK1 strain and fungal kefir starter culture for the development of a fermented milk product enriched with metabolites of probiotic cultures.
