Sensory and cultural aspects affect consumer acceptability. To ensure edible insect product safety, hazards and pollutants are addressed. The legal analysis highlights compliance issues and possibilities.</p><p><strong>Conclusion: </strong>This review shows how enzymatic hydrolysis and fermentation improve edible insect functioning, safety, and nutrition.
