摘要

为了增进人体健康,保障食品安全,提高公众对食品健康的认识,有必要对甜瓜籽库力的营养质量进行评价。Kuli-kuli主要由花生制成,是大多数尼日利亚人(尤其是北方人)消费的主要小吃之一。在Kuli-kuli的生产中使用的瓜子是未知的。为此,开展了以甜瓜籽为原料的Kuli-kuli的生产和营养评价研究工作。感官评价表明,由瓜子制成的甜瓜在外观、香气、质地、口感和可接受性方面都存在差异。
