Samples were obtained from the beekeeping area of East Jakarta. The results showed that, storage temperature greatly affects the quality of honey. Diastase enzyme activity was significantly different in each treatment at storage temeprature (P-Value < 0,05). 摘要

蜂蜜是蜜蜂产生的天然液体。在现实中,如果储存不当,质量可能会降低。淀粉酶活性是蜂蜜品质的重要指标之一。本研究采用分光光度法测定贮藏温度对蜂蜜淀粉酶活性的影响。样本取自东雅加达养蜂区。结果表明,贮藏温度对蜂蜜的品质影响较大。淀粉酶活性在不同贮藏温度下差异显著(p值< 0.05)。蜂蜜的最佳贮藏温度为室温(26℃),高于高温(50℃)和低温(±5℃)。
