Impact of the consistency of food substances on the health of residents in welfare facilities for seniors
The effect of the consistency of food substances on health has not been assessed. The ingestion of food substances which require mastication promotes salivary secretion and oral function, which may in turn lead to a lower incidence of aspiration pneumonia.
