Furthermore, the effects of the chitosan and its nanoparticles against specific foodborne pathogens including Staphylococcus aureus, E. coli, Salmonella Typhimurium, Vibrio parahaemolyticus and Aspergillus flavus were screened. The obtained results indicated that chitosan nanoparticles were effective for elongation of the shelf life of tilapia, particularly chitosan nanoparticles with particle size of 37 nm. In addition, chitosan and its nanoparticles had significant antimicrobial effects either against the hygiene indicators, or foodborne-specific pathogens. 摘要

研究了壳聚糖和纳米壳聚糖(粒径分别为37nm、78 nm和222 nm)对新鲜罗非鱼冷藏保鲜效果的影响。此外,通过对卫生指标(细菌总数、嗜冷总数、霉菌和酵母菌总数)的评价,进一步考察壳聚糖及其纳米颗粒对罗非鱼微生物品质的改善作用。此外,还研究了壳聚糖及其纳米颗粒对金黄色葡萄球菌、大肠杆菌、鼠伤寒沙门氏菌、副溶血性弧菌和黄曲霉等食源性致病菌的抑制作用。结果表明,壳聚糖纳米颗粒对罗非鱼的保存期有较好的延长作用,尤其是粒径为37 nm的壳聚糖纳米颗粒。此外,壳聚糖及其纳米颗粒对卫生指标和食源性特异性病原体均有显著的抗菌作用。综上所述,壳聚糖及其纳米颗粒可有效延长罗非鱼的保质期,改善罗非鱼的微生物品质。
