The strain isolated from yogurt showed the greatest activity. \nEnzyme activity was higher in cell suspensions than in cells or culture filtrates. The isolate was inferred to be a lactic acid bacterium based on Gram staining, biochemical tests, and the fact that it was isolated from commercial yogurt. The optimal concentrations of carbon, nitrogen, and minerals for cell growth and enzyme production were investigated. Isolation and Media Optimization of Lactic Acid Bacteria Producing β-galactosidase
