This research is a descriptive study with a qualitative approach. The sampling technique used was purposive sampling which consisted of purchasing staff and F&B Manager. Data collection techniques are carried out using interview, observation, and documentation methods. 摘要

摘要本次研究的动机是天际线餐厅经营商品采购管理不善,由于频繁出现紧急商品,但用户很少直接参与收货,对商品的采购计划不正确,组织结构不合理,订购商品缺乏沟通。本研究采用定性方法进行描述性研究。采用的抽样技术是有目的抽样,由采购人员和餐饮经理组成。数据收集技术采用访谈、观察和记录方法。数据分析技术的使用要经过三个阶段,即:数据简化、数据呈现和结论。根据所进行的研究结果,发现与天际线餐厅经营物品采购管理有关的几件事,即:采购请求、供应商选择、采购订单、收货、采购交易记录,整个过程都要注意计划、组织、指挥、监控等几个管理功能,使天际线餐厅的经营物品采购管理运行良好,不给员工或酒店造成损失。关键词:管理,物资采购,餐饮
