The results showed that compared with the model group, probiotic fermented pollen could increase tolerance time and decrease sobering up time, reduce the level of β -EP in the brain tissue of rats, protect the integrity of cell membrane in the liver, improve the activity of Alcohol dehydrogenase (ADH) and Aldehyde dehydrogenase (ALDH), improve the activity of Superoxide dismutase (SOD) in the liver, improve the level of Glutathione (GSH), reduce the level of Malonyldialdehyde (MDA).
