Abstract

This study investigated the in vitro digestibility, glycaemic index (GI) and bile acid–binding capacity (BABC) of some potential resistant starch source food products (PRSF). Commercially available resistant starch (RS) samples, Hylon VII (RS2), Novelose 330 (RS3) and Fibersym (RS4) were also included in the study.
