Abstract

The goal of this study was investigate effect of various thermal techniques, i.e. boiling, steaming , microwave and on moisture ,ash ,TSS, ascorbic acid , total phenols, total flavonoid and antioxidant activity of two vegetables type (green beans and broccoli ).
