Abstract
The Payakumbuh Albatsit Bread UMKM is a bakery business founded in 2021. The number of defective bakery products in the Albatsit business is relatively high; out of a total production of 41,966 pcs, there are 2,277 pcs that experience defects. Bread defects are caused by unsuitable shapes, bread that rises imperfectly, bread that rises later than usual
