Methods: Considering the extraction rate of total flavonoids for the evaluation index, the size of particle screen, extraction solvent, extraction solvent percentage, solid-liquid ratio and extraction time were selected as the influencing factors based on the single factor experiment. Results: The optimal conditions are as follows: 100 mesh particle size, 60% ethanol as extraction solvent, 1:60 ratio of material to liquid, 60 minutes of extraction, and 30 minutes of ultrasonic extraction. Under this optimal extraction condition, the extraction rate of total flavonoids from pomegranate peel was 119.5 mg/g, and the degree of its main influencing factors was solid-liquid ratio > extracting time > ethanol concentration > mesh.
