Abstract

This study was completed on an artificial microbial community (consortium) including three microorganisms of dairy interest, two mesophilic (Lactococcus lactis subsp. cremoris and Geotrichum candidum) and one thermophilic (Lactobacillus delbrueckii subsp. bulgaricus).
