Abstract
Wuding chicken soup is renowned for its delicious and rich flavor. By using multiple machine learning algorithms, the key features that determine the taste of kokumi were identified, and thus four kokumi peptides were screened and synthesized. However, their potential as kokumi supplements remains unclear. To investigate their taste characteristics, sensory evaluation and electronic tongue analysis were performed. Additionally, circular dichroism spectroscopy (CD) and molecular dynamics simulations (MD) were employed to predict the secondary structures of these peptides and their interactions with the calcium-sensing receptor (CaSR). The kokumi thresholds were determined to be 0.12–0.16 mmol/L in model chicken soup and 0.06–0.09 mmol/L in an MSG/NaCl model solution, demonstrating their ability to enhance umami, saltiness, and sweetness. These peptides show promise as taste enhancers in the development of salt-reduced, sugar-reduced, and umami-enhanced food products.
期刊介绍:
LWT - Food Science and Technology is an international journal that publishes innovative papers in the fields of food chemistry, biochemistry, microbiology, technology and nutrition. The work described should be innovative either in the approach or in the methods used. The significance of the results either for the science community or for the food industry must also be specified. Contributions written in English are welcomed in the form of review articles, short reviews, research papers, and research notes. Papers featuring animal trials and cell cultures are outside the scope of the journal and will not be considered for publication.
