Abstract
Chitosan oligosaccharide (COS) is a low-molecular-weight hydrolysate derived from chitin and chitosan through chemical hydrolysis or enzymatic degradation. Compared with its parent polymers (chitin and chitosan) and other common natural polysaccharides, COS displays prominent water solubility, favorable biocompatibility, and multiple biofunctions including antibacterial, antioxidant and anti-inflammatory. Derivatization strategies for COS effectively strengthen its performance as carriers for drugs and genes, further expanding its applicable scope within pharmaceutics, food science and biomaterial engineering. This article reviews the preparation methods, structural characteristics, physicochemical properties, antimicrobial mechanisms, and clinical applications of COS as an antimicrobial agent. Integrating recent literature, it comprehensively analyzes and discusses the antimicrobial mechanisms of COS, key factors influencing its antimicrobial activity, and future development trends, aiming to evaluate its medical value and provide direction for its fundamental research and clinical translation.

Industrial Crops and Products is an International Journal publishing academic and industrial research on industrial (defined as non-food/non-feed) crops and products. Papers concern both crop-oriented and bio-based materials from crops-oriented research, and should be of interest to an international audience, hypothesis driven, and where comparisons are made statistics performed.
