Abstract
Cage-free egg production systems, in addition to its namesake, include pasture-raised and certified organic eggs. Rising consumer concerns about animal welfare have increased demand for these options, yet little is known about the extent to which consumers understand these product distinctions and how information may influence their beliefs and willingness to pay. This study used an incentivized, artefactual field experiment to elicit preferences and beliefs regarding hen welfare, environmental impacts, and nutritional quality across production systems, both before and after information provision. The results indicate that information attenuated beliefs about the welfare and nutritional benefits of cage-free systems, while increasing beliefs about various benefits of pasture-raised and certified organic eggs. Price premiums increased for pasture-raised eggs and decreased for cage-free and conventional eggs.
