Abstract
Ommochromes are natural pigments occurring in the eyes and skin of invertebrate animals that provide camouflage, light shielding and protection against oxidative stress. The object of this study was ommochromes obtained from the skin of the Commander squid. The aim of the work was to study the physicochemical properties, antioxidant and antiglycation activity of ommochromes. The antioxidant activity of ommochromes was evaluated by the luminol chemiluminescence quenching method. The antiglycation activity of ommochromes was assessed by the degree of inhibition of glycosylation of bovine serum albumin with fructose. It was found that ommochromes demonstrated relatively high antioxidant (IC50 = 32 µg mL−1) and antiglycation (IC50 = 40 µg mL−1) effects. It is assumed that natural non-toxic ommochromes from cheap raw materials can be used in the food industry as well as for the prevention and treatment of the diseases associated with oxidative stress development.
